Dinner X2

This past weekend was delightful. The wedding shower was catered and the food was absolutely delicious and well presented - think poached salmon covered in cucumbers (this is exactly what it looked like). Too bad I forgot my own camera. The salmon was tasty, but I think the best part was dessert of raspberry sorbet garnished with a sugar cookie and a sprig of mint.

Later on Saturday I was able to hang out with some friends that I don’t get to see very often. I took the Supercharge Me cookies, they really worked considering there were only 2 left and we ended up staying out until 2AM. Fun times! The cookies that were left were consumed by me and a friend for breakfast. I love that pair with some fruit these cookies are actually a decent “part to a complete breakfast”. 

Now for the Dinner X2

Last nights dinner, big salad with black beans, garbanzo beans, carrots, cucs, and tomatoes (with TJ’s Sweet Poppyseed dressing). I also had some cold shirataki noodles (oh yes I did) with fresh basil and a little balsamic vinaigrette. The noodles cold were good. I would totally make cold pasta dish with them again.

On the side I had some roasted broccoli and squash (sprayed with canola oil spray, sprinkled with black pepper and sea salt and baked at 350 for about 25 minutes) . Two of my most favorite veggies cooked in my favorite way. Perfection.

Tonight’s dinner was inspired by Isaac’s grocery shopping. He bought himself a steak and me some salmon and sweet potatoes for us both. I whipped up a very small and simple salad. Romaine, cucumbers, and tomatoes. I sprinkled on a lil pepper, but didn’t use any dressing. I find that with fresh, seasonal veggies you don’t really need dressing because the vegetables are so flavorful on their own.

Grilled salmon and the sweet potato. The sweet potato was organic and was seriously the best one I’ve had in a long time. I usually dress up my sweet potatoes, but again this one was so sweet on it’s own I ate it plain and enjoyed every bite. I didn’t eat the skin though, which is actually one of my favorite parts- but I’m pretty certain that the skin hurts my stomach so I refrained myself from eating it).

I’m pumped because I started The Fitnessista’s Summer Shape Up today!! I did Day 2 of the workouts and followed the eating plan. Day 1 down, 89 to go. :)

Does anyone have big plans to celebrate Cinco De Mayo? Isaac and I were just talking about it, but we haven’t quite decided what to do yet!

Shirataki Noddles!!

Have you tried Shirataki Tofu noodles? I have once before, but this time was a bit different because I used them as a substitute for regular spaghetti noddles rather than in a soup.

A bed of noodles (about half the pack), steamed broccoli, and marinara sauce.

I found the noodles to be rather good. I admit, they do smell when they first come from the package, and that part was still a little gross, but once they are rinsed, par boiled and dried the odor is long gone and they taste pretty good. They are a bit chewy, like al dente pasta and have little to no flavor alone. They are like tofu (hence tofu noddles) and take on the flavors from other items in the dish. Plus, they cook in less than 4 minutes and they have 20 calories per serving- you can’t really beat that! One thing I haven’t researched yet is what to do the with leftover noddles. I cooked the whole package and only ate 1/2. For right now I have the cooked (and dried) noddles in a container in the fridge, but I’m not sure they will stay good that way? Anyone know??
