A Gift for Me + You

Thank you to everyone for all the sweet birthday wishes. I was definitely feeling the love yesterday!

And, last night turned out to be lovely…

I went to the gym for a quick b-day sweat sess after work while Isaac fixed up a delicious feast. As soon as I walked in the door, dinner was served!

Spring mix with blue cheese and Annie’s raspberry vinaigrette.

Roast salmon with Thai red curry sauce and the biggest stalks of asparagus ever.

He followed this recipe from Fitness Magazine for the salmon and just used a little olive oil, garlic and balsamic for the asparagus. The salmon was some of the best I’ve had in quite a long time. I’m sure it had something to do with the fact that it came from Whole Food’s (they always have a good selection of quality seafood) but the sauce was amazing as well. We have plenty of it left over so I’m sure it will be making a reappearance soon.

In addition to all this, I received really nice presents, including some fun kitchen items I’ll be putting to good use asap- a pressure cooker, cutting board and a shiitake mushroom growing kit!!

A fun package also arrived in the mail, just in time for my birthday breakfast, me & goji custom cereal.

The company offered to let me create a cereal of my choice and send it to me free of charge. I had a blast making my own mix – there were so many amazing add-ins, it was impossible to choose. But after trying out several different combinations I ended up with my own SuperFruit Blend that has a base of the artisanal cereal (multigrain oat bran, rye, spelt, barley, amaranth, wheat germ), quinoa, mulberry, goji, bluberry, chia, and sliced almond.

I love mulberries and goji berries so this cereal makes me very happy! It’s not super sweet but has a nice fruity taste from all the super fruits! The coolest part about me and goji (besides the all-natural and organic ingredients) is that each tube of cereal is hand=mixed by the owner’s Adam & Alexander. My SuperFruit blend was signed by Adam!

Dinner, Delish

Sunday I woke up ready and raring to take on the day. I hit up the gym for a quick treadmill session and to WMM, stopped by the Asian market and came home for breakfast. There was also a visit to Starbucks in there for a Green Tea Soy Latte with no syrup.

I finished off the green foam from the latte while gobbling up a bowl of Kashi go lean, unsweetened vanilla almond milk and banana slices. I putzed around the house for the remainder of the morning and then contemplated what to have for lunch. I should have prepared something but I was itching to try one of the new Amy’s meals I snagged on sale from Kroger so I tried the Thai Stir-Fry.

I love Thai food so I had high hopes for this meal, but I hate to say it but this is probably my least favorite Amy’s product (and you all know I love Amy). First, I was a little put off by the white rice- I just wonder why they couldn’t have used brown instead? The veggies were too mushy and the sauce didn’t have a great flavor either. Plus, it wasn’t spicy. I can’t really complain about the spicy part because they don’t advertise it as spicy, but it’s Thai food so I just assumed there would be a little kick. Nope, not so much.

I added some sriracha and ate most of the meal leaving behind a third of the rice. I think I’ll just stick with my fav Amy’s Indian meals- no more Amy’s Thai for me.

After a fun trip to Home Goods, Whole Food’s, and Trader Joe’s I came home and Isaac I headed off for our dinner date with one of Isaac’s friend’s father and his girlfriend. She had prepared a lovely meal for us to enjoy and it was fun to catch up with them over dinner.

Isaac’s turtle napkin holder caught my eye. It looks like he’s (very slowly) running away with the napkin.

To start: a red lentil soup with fennel and other aromatic spices.

And the main course: wild caught salmon, baked sweet potato, and simmered kale.

Frances is a wonderful cook and everything was so delicious. Her kale was prepared in a way that I’d never had before and I absolutely loved it! I excited to have gotten the recipe. I’ll definitely be recreating that sometime very soon.

After having both of my dinners prepared for me this weekend I’m ready to get back in the kitchen and make a little something, somthing. I have another recipe for EDBV (no surprise there) ready to try out tonight.
