I’m glad everyone seemed to really like my sushi post and the leopard smoothie! I feel badly, because I didn’t have the time to take photos and explain the whole process of sushi making, but if you are interested in trying it for yourself there are some good resources online. I like this one a lot. Plus, it’s really fun- I highly recommend it!

Speaking of sushi I had 5 leftover pieces for lunch yesterday along with this yummy massaged kale salad.

Fresh kale massaged with a 1/4 of an avocado and some lemon juice with carrots, cucumbers, broccoli, and nutritional yeast.

Once home from work and the gym, I whipped up some raw corn salad for dinner.

And served it along side a SUNSHINE BURGER!! I had heard a ton about these little burgers, but hadn’t bought then because their quite expensive and only 3 come in a pack. This weekend when I went to whole foods the burgers were on sale and I had a coupon so I got two boxes- the original and the falafel.

I decided to try the falafel variety last night, because FALAFEL is sooo tasty! I used the toaster oven to heat it up and followed the package directions but I think it may have cooked too long because it ended up being quite dry. The flavor was still good and it wasn’t super dry in the middle, however it was very dry along the edges. I was still overall happy with the burger and hopefully next time I won’t cook it so long and it won’t turn out dry. And, at some point I really want to try the recipe for the falafel sauce on the side of the package – it looks super delish.

What really strikes me about these burgers is the fact that they are gluten free and check out the Ingredient list: Organic raw ground sunflower seeds, organic brown rice, organic chick peas, organic split peas, organic tahini(ground toasted organic sesame seeds), organic sesame seed paste, organic parsley, organic cumin powder, organic garlic, organic sea salt. Short and nothing but the goood stuff, gotta love it.

After getting some much needed beauty rest I woke up to a bowl of glorious oats all made possible by Heather’s chocolate chip granola.

How yummy does that look? Whoever said oatmeal was bland was dead wrong. With a few additions oatmeal is pretty much the best b-fast around.

I went home for lunch and whipped up a quick salad and some veggies with hummus. Easy pleasy.

Romaine lettuce topped with carrots, avocado, zucchini, cucumber, sprouts (that I spouted myself!!!), some left over raw corn salad, and TJ’s goddess dressing.

The hummus was TJ’s garlic hummus, not Sabra, but it did the job!

Back at work for the afternoon I had a snack of trail mix. Too bad the snack turned into a what I would consider a meal of trail mix. I have such a hard time only having one handful of MIXES! I think I just need to bring my own healthy snack to the office, keep it on my desk, and stay away from the kitchen. Right Molly? Molly is a blog reader, but also a co-worker that understands my snacking dilemma. :)
