Satify That Craving

by Eating Bird Food on September 14, 2009

Getting back in the groove today was quite hard, but all and all I had a pretty good day. Work was busy so the day went by quickly, which is always a good thing. It all started with a one hour session on the elliptical. I usually only do 30 minutes of cardio but I’m trying amp up my routine so today’s session was extended. After getting sweaty, I came home, got ready for work, and made my go-to quick breakfast, a smoothie and a slice of ezekiel bread with Crofter’s Superfruit spread.

Pineapple Banana Chia Smoothie

  • 1/2 frozen banana
  • 1 cup of frozen pineapple
  • 1 tbsp. of chia seeds
  • 1/3 cup of unsweetened vanilla milk
  • 1/3 cup of water

I threw all the ingredients in the Vita-Mix, toasted my bread and ta-da breakfast was served (as I ran out the door).

This breakfast held me over really well and I didn’t end up eating lunch until 12:45 or so. This was crazy for me because I’m usually starving by the time the clock strikes noon. I had a massaged kale salad that was massaged with a tiny bit of olive oil and avocado and tossed with cucumbers, snow peas, orange bell peppers, oven “fried” tofu, raw corn, and red onion.

IT WAS DELICIOUS! I think I would have this salad everyday if I could. Raw corn totally made it- I love the sweetness it adds.

I packed a little snack mix to take back for work. I mixed whole grain cheese goldfish, raisins, kashi go lean, raw almonds, and a couple TJ’s peanut butter stuffed pretzels.

Savory and sweet can’t be beat.

Since the spring rolls I purchased over the weekend weren’t up to par I decided to make my own tonight for dinner.

Tofu Spring Rolls:

I stuffed each rice paper with rice noodles, cucumbers, carrots, oven “fried” fu’, romaine lettuce, fresh basil, and a few squirts of sriracha sauce. I dipped the rolls in a homemade sauce of tamari (wheat free soy sauce), peanut butter, and water. I hate to toot my own horn, but mine were definitely better than Ellwood’s over the weekend. These were delicious and completely satisfied my spring roll craving.

Maybe now I can move on to move fallish foods. Pumpkin oats here I come! What type of foods have you been craving lately?

Coconut Oil is Lovely

by eatingbirdfood on September 1, 2009

It was rather chilly again this morning when I woke to take Olive outside. It totally made me want to make pumpkin oats, but alas, I didn’t have any canned pumpkin so I made a combination of oatmeal, oat bran, raisins, and cinnamon. I topped it with crushed walnuts, Artisana’s walnut butter and Cacao Bliss.

The delicious toppings totally made up for not having any pumpkin. I’ve been thoroughly enjoying my Artisana samples. The unique nut butters- such as the walnut butter are the perfect way to dress up my oatmeal and they’re so tasty.

I’ve also been enjoying the Artisana raw coconut oil – and for more than just my eats. I read that coconut oil is great for your skin so I decided to test it out. I consider myself very lucky as I’ve always had pretty clear skin (even through the teenage years) but just recently I’ve started to get little fleshed colored pumps on my cheeks and along my jaw line. They aren’t super noticeable, but I still notice them. I went to a dermatologists and she said it was acne and gave me samples of a super expensive acne cream. My insurance didn’t cover it plus I realized from that samples that it really dries out my already dry skin. After reading that coconut oil is good for dry skin I took it upon myself to try out the coconut oil as my nightly facial moisturizer. A tiny bit goes a long way. I love the coconut smell and by morning my face is completely hydrated yet not oily at all. The bumps haven’t completely went away (it’s only been about 1 week), but my skin is super smooth and I feel the bumps are less noticeable. Although I am loving the coconut oil, I wouldn’t recommend it for someone who has oily or combination skin.

Here I am with my latest beauty obsession. Please remember this photo was taken at 7:00AM before make up or hairstyling. :)

Does anyone else use coconut oil as a facial moisturizer or for any other beauty purposes?

Speaking of which, I was considering doing a post of the beauty products that I like- let me know if you all would be interested in that at all.

Salad overload

May 14, 2009

I’m trying really hard to do all the right things for my knee to heal quickly and properly – moist heat, ibuprofen, elevation, REST= skipping the gym. The last part is so hard for me. I miss my normal routine and the energy I GET from working out. In turn I’ve found that it’s making [...]

The New Nutty Bar

March 5, 2009

I had the best snack I’ve had in LONG time. And, it reminded me of one of my favs back in elementary school:  Any Nutty Bar fans in the house?? Little Debbie’s treats used to be my snack of choice when packing my lunch and Nutty Bars were on the top of the list with Oatmeal Cream [...]

Recycling tells All

January 12, 2009

Mondays are recycling day for me, every other Monday, to be exact. It makes me happy when it’s recycling day because then we can remove the massive pile of recyclables, that’s been collected over 2 whole weeks, off our front porch. It can get to be a little crazy  out there on the porch, but it’s in [...]

Missing My Oats

September 11, 2008

This morning I realized I was out of bananas so I sadly decided to forego making oats. I had a bowl of puffed wheat cereal with skim. The cereal didn’t completely fill me up so I put a veggie sausage on the stove and had that as well. Around 10 I was feeling hungry once [...]
