I want to share my eats from yesterday with you first, but if all you really care about is who one the giveaway… just scroll down.
I came home for lunch yesterday and made a quick Ezekiel sandwich with 1/4 of an avocado, 2 slices of tomato, edamame hummus, spinach leaves, and english cucumbers.

I also had some fresh pineapple on the side…. perfect lunch, except the toasted bread and pineapple combined kind of cut my mouth up a little bit. Hate that!!!

I didn’t have an afternoon snack and by the time I got home I was ravenous. I decided to use up some frozen veggies- sweet corn and edamame and make a super delicious spinach salad. For the dressing I searched through the Peta’s Vegan Cookbook and decided to make the “Bas-Ass” Balsamic Vinaigrette. It was super easy to make and tasted pretty darn good.

I also had a Nakey Quorn Cutlet with some ketchup.

These protein powerhouses remind me of a bird’s cuddle bone, which I’m not going to lie kind of freaks me out a little bit, but they taste delicious and have less than 100 calories so I think I’ll just get over it.

I don’t know what got into me this morning but I slept until almost 10 AM. I’m usually an early riser so it was a surprise to wake up and see the clock at 10. I decided to have a bowl of puffed wheat cereal with half of a banana mixed in. I used the other half to make a little fruit plate- bananas with dots of peanut butter and some pineapple.

I went to the gym, ran by target, and went to the local health food store Ellwood Thompson’s because I was craving more of their Tempeh mock-chicken salad. I had a few in store samples while I was there – mainly of bread. I got home and served my tempeh on top of some spinach and tomatoes. I was starving by this point because it was already 2 PM -it was so tasty. 
Oh and I decided to make homemade pumpkin pie yogurt. I stirred some cinnamon and pumpkin puree into the vanilla yogurt with a little granola sprinkled in.
Then I had a handful of chocolate chips to satisfy my sweet tooth.
Around 5:30 I ate a few bites of whole wheat sourdough and a few bites of quinoa while Isaac was napping. When he woke we decided to walk to a nearby wine tasting (all wines from Italy) and eat at Ginger Thai Taste. It was a rainy walk, but worth it, the food came so quickly and was so good. I love Thai! I ordered fresh shrimp spring rolls and had a bite of Isaac’s basil tofu. 
I think we are going to stay in and watch a movie. No better way to spend a rainy night.
