Welcome

by Eating Bird Food on July 21, 2010

I came yesterday to this little number sitting outside our back door. Very EBF appropriate!

Thanks to Mr. Isaac and his great taste in home decor. :)

Speaking of welcoming. I wanted to give a shout out to all of my new readers – even if you don’t comment I know you’re out there. I hope you are enjoying this little piece of the blogosphere. I want to be a helpful, inspiring, and fun blog to read so please let me know if there is anything you to see on here as I’m always up for suggestions.

Now, back to those peaches. They’ve been ruling my meals lately. Partly due to the fact that their delicious and also because I’m doing my best to incorporate them into my everyday meals and snacks rather than making a big dessert. It would be fine if I had a party/function to take peach pie/cobbler/crumble to but with only 2 people in the house having a 9×11 pan of peach cobbler sitting on the counter would be much too tempting. And as my luck would have it, I’d be the one to eat most of it. I digress.

I had a peachy breakfast waiting for me in the fridge after going to the gym. Woo-hoo for getting to workout after a 3 day break. I took it easy and did the elliptical and some abs. My back didn’t hurt but my leg is still doing the tingling thing. Not as bad as it was before, but it’s definitely still there. :/

Peach Overnight Oats

  • 1/2 cup oatmeal (old fashioned)
  • 1 cup almond milk (unsweetened vanilla)
  • 1 T chia seeds
  • 1 peach, chopped and mashed
  • Dash of cinnamon

Combine all ingredients in a bowl, mix well, cover, and let sit in the fridge overnight. That’s it! Wake up, top the mixture with you favorite toppings and enjoy.

After work I tried my hand at some peach salsa per the recommendation of Natalie over at The Sweet’s Life. I didn’t have red onion, jalapeño or cilantro so I rolled with what I did have.
2 tomatoes3 white peacheshandful of basil1/2 medium white onion1 chile pepper
I thought throwing all the ingredients into the vitamix was the perfect idea.

Sounds good right?

I’m not sure what I did wrong – maybe putting the peaches on the bottom? But, let just say I ended up with peach salsa soup instead of salsa. Delicious peach salad soup nonetheless, but still way too soupy. (I guess that’s what I get for having a super powered blender.)

Being bummed with the result and having more peaches at my disposal, I decided I would make another “chunkier” batch with hand chopped tomatoes and peaches.

chunky peach salsa.JPG

This one ended up being too chunky for my tastes! So I did what seemed logical and mixed the two batches of salsas together- problem solved.

So the consistency of the salsas gave me a run for my money, but the flavor was ah-ma-zing!! I loved the sweet and spicy flavor combination.. maybe a little too much considering I ate my fair share of chips while “testing out” the salsa. ;)

I’m actually sipping another peach smoothie (same recipe as Monday) this morning as I type. You may find it hard to believe but we only have about 5 peaches left. Between smoothies, oatmeal, snacks, and salsa the peaches were consumed rather easily. We did give a couple away, but only about 7 or so. My CSA already sent out another email about ordering more.. I’m tempted, but we shall see. :)

I hope you have a fabulous Wednesday!

PS – A couple people inquired about the Whole Foods cooking demos that I attend so here’s the deal. My local WF hosts one cooking demo each month where a chef prepares a themed menu, hands out the recipes and provides samples. Go to your local WF website, call customer service or check the in-store calendar to see if they offer the classes near you. I love attending and I always learn something new every time I attend. In case you’re interested, here are some of the others I have attended. Whole Foods Deliciousness South of the Border So Much to Sea

Perks of Being a Race Volunteer

by eatingbirdfood on August 24, 2008

Out of all the volunteer options during a half-marathon I picked the food tent because I wouldn’t need to get there before the race and I wouldn’t have to stay long after the race. It was a good pick for several reasons, but being paid in food was one of the biggest perks. Of course I also enjoyed being able to congratulate all the runners… they were very appreciative of the food volunteers. So back to the details of the biggest perk: While volunteering from 7 AM – 11 AM the women in charge kept taking nibbles of the food and offering me nibbles and then when I was leaving they insisted that I take food home.  I left out of there with a box full of Panera bagels, grapes, pretzels, bananas, and mini Clif-bars. I was most excited about these:

I think these are the perfect size Clif-bars. I haven’t had the Cool Mint Cholcolate yet so I will let you all know what I think of it once I do. I froze some of the bagels and I’m going to save the bananas until they get nice and brown for some banana bread!

For breakfast this morning I had banana oats within and flax and Udi’s vanilla almond granola on top. I did something different with my oats and had a spoonful of PB on the side. I know this isn’t that different because a lot of other bloggers do it, but new to me. And my thoughts… it was a great addition. It was sweet so I didn’t need any sf maple syrup or brown sugar and I didn’t get hungry for a snack all morning. BUT I need to try it one day when I am home all morning though because I went out to the gym and to the Verizon store and didn’t get home until lunch time. Usually I don’t get as hungry when I am busy, whereas when I am sitting at home I go for a snack… most likely a boredom eating thing. Anyone else have this problemo? Any solutions?

For lunch I had baked tortilla chips with peach salsa from Trader Joe’s. Which was quite smoky and spicy, just as the label touts. I had an Amy’s california veggie burger on an Ezekiel english muffin half with tomato, ketchup, feta cheese, and onion. And a few grapes from my volunteer experience. I’m stuffed- off to take a nap and wait for Isaac to get home from a frisbee tournament.
