I came yesterday to this little number sitting outside our back door. Very EBF appropriate!

Speaking of welcoming. I wanted to give a shout out to all of my new readers – even if you don’t comment I know you’re out there. I hope you are enjoying this little piece of the blogosphere. I want to be a helpful, inspiring, and fun blog to read so please let me know if there is anything you to see on here as I’m always up for suggestions.

Now, back to those peaches. They’ve been ruling my meals lately. Partly due to the fact that their delicious and also because I’m doing my best to incorporate them into my everyday meals and snacks rather than making a big dessert. It would be fine if I had a party/function to take peach pie/cobbler/crumble to but with only 2 people in the house having a 9×11 pan of peach cobbler sitting on the counter would be much too tempting. And as my luck would have it, I’d be the one to eat most of it. I digress.

I had a peachy breakfast waiting for me in the fridge after going to the gym. Woo-hoo for getting to workout after a 3 day break. I took it easy and did the elliptical and some abs. My back didn’t hurt but my leg is still doing the tingling thing. Not as bad as it was before, but it’s definitely still there. :/

Peach Overnight Oats

  • 1/2 cup oatmeal (old fashioned)
  • 1 cup almond milk (unsweetened vanilla)
  • 1 T chia seeds
  • 1 peach, chopped and mashed
  • Dash of cinnamon

Combine all ingredients in a bowl, mix well, cover, and let sit in the fridge overnight. That’s it! Wake up, top the mixture with you favorite toppings and enjoy.


After work I tried my hand at some peach salsa per the recommendation of Natalie over at The Sweet’s Life. I didn’t have red onion, jalapeño or cilantro so I rolled with what I did have.
2 tomatoes3 white peacheshandful of basil1/2 medium white onion1 chile pepper
I thought throwing all the ingredients into the vitamix was the perfect idea.

I’m not sure what I did wrong – maybe putting the peaches on the bottom? But, let just say I ended up with peach salsa soup instead of salsa. Delicious peach salad soup nonetheless, but still way too soupy. (I guess that’s what I get for having a super powered blender.)

Being bummed with the result and having more peaches at my disposal, I decided I would make another “chunkier” batch with hand chopped tomatoes and peaches.

This one ended up being too chunky for my tastes! So I did what seemed logical and mixed the two batches of salsas together- problem solved.

So the consistency of the salsas gave me a run for my money, but the flavor was ah-ma-zing!! I loved the sweet and spicy flavor combination.. maybe a little too much considering I ate my fair share of chips while “testing out” the salsa. ;)

I’m actually sipping another peach smoothie (same recipe as Monday) this morning as I type. You may find it hard to believe but we only have about 5 peaches left. Between smoothies, oatmeal, snacks, and salsa the peaches were consumed rather easily. We did give a couple away, but only about 7 or so. My CSA already sent out another email about ordering more.. I’m tempted, but we shall see. :)

PS – A couple people inquired about the Whole Foods cooking demos that I attend so here’s the deal.
