I didn’t get to do as much baking/cooking as I would have liked this weekend, but I did muster up the time to make 2 delicious creations. The first started with some rotten naners. I had 2 very much brown bananas that were screaming to be made into banana bread. I remembered this recipe from The Fitnessita and got to work. I followed the recipe exactly for the first loaf (minus the raisins and all spice subbed in for the nutmeg).

For the second loaf I sweetened things up and added some mini chocolate chips.

Although baking made me miss the gym yesterday morning. It’s all good because the house smelled heavenly all day and the bread turned out fabulous! It’s incredibility moist despite not having any oil or butter. And, I love the flavor of the organic sucanat, its molasses taste simply shines in this bread. Much thanks to Gina for sharing this recipe as she is the true the mastermind behind the bread.
While the bread was baking I also had another treat sun bathing in the dehydrator.
Just Dried Mango

I am elated to be able to make this on my own at home. I LOVE dried fruits and mango is one of my favorites. Plus this method is much cheaper, greener (less packaging), and healthier (no sulfur or sweetnered added)- gotta love it. I can’t wait to experiment with other fruits.
Back to work today, it’s going to be a busy one because we released a new version of our product over the weekend!!
