Thanks for all the sweet comments about my new kitch. As I said before Isaac and I are utterly stoked about the new place. Do you know how nice it’s going to be to have a dining room? No more having guest piled around the coffee table for dinner- once we actually buy a dining room table, that is. Hopefully we can find a good deal on one – I’ve already been stalking Craigslist.
On to the food……
I went on a little salsa craze Sunday/Monday. A friend of mine mentioned that she tried plain Greek yogurt and salsa on a baked sweet potato and thought it was awesome. Considering I love the combo of cottage cheese and ketchup on baked sweet potatoes I thought I’d give it go.

The verdict = YUM!
And for breakfast yesterday I whipped up a swiss chard and onion omelet and topped it with more salsa.

It was tasty, but for some reason eggs never keep me as full as oatmeal. Oats just have an amazing “stick to ribs” factor – hence, the reason I tend to eat oatmeal almost everyday.
The marketing team went out to lunch for work yesterday. We like to try new places in the area so we hopped over to 3325 West- a new Cafe in Carytown.

The Mediterranean wrap with Texas Caviar (aka bean salad). The wrap had hummus, tabouli, and a few other veggies. The banana peppers completely overpowered the whole wrap. Overall, the meal was okay – but the service was awful. Everyone in our group of 7 agreed that we won’t be eating at 3325 West again.
Post work I met up with my lovely cousin for a bite to eat at Olio, a cute little European Market and Bistro. She’s considering moving across the country so we had plenty to chat about while enjoying the marinated veggie pizza with garlic hummus with zucchini, eggplant, and roasted tomatoes and artichokes.

Luckily, this dining experience was much better.
In other news, there’s been a little dehydrator action happening in the EBF kitchen.

Raw Macaroons

The recipe I followed is in Matt Kenney’s Everyday Raw Cookbook but of course thanks goes to the Fitnessista for initiating my macaroon love! The chocolate macaroons turned out to be my favorite this time around. I know this because I ate one for breakfast this morning.
Since I had the dehydrator out I also made some kale chips with kale from my CSA!

I didn’t really follow a recipe for the kale chips – I just doused clean kale with a lemon juice, olive oil, Chipotle Cayenne Parma and dehyrated them at 115°. They turned out super flavorful and super addicting! They might be worse than regular chips just because I know they’re not bad for me.
