Friends and Good Food

Could there be a better combo? I think not!

So, I left off Saturday eve. without showing what I had for dinner. It was good and easy so I thought I would provide a quick recap today. (Really the photo was still on my camera and I didn’t want it to go to waste!)

Amy’s California Veggie burger with a slice of avocado spread on top, a tomato, onions and ketchup with a side of steamed broc with S&P. I love putting avocado on burgers… delicious!

Sunday’s plans were to go hang out at a co-worker of Isaac’s at her house in the country… in a town called BUMPASS (I kid you not). I just googled Bumpass, va to find a link. I found, “Virginia is for Lovers, Bumpass”. Now maybe I’m just immature, but this made me laugh a little.

I ate a quick breakfast before heading out on our magically journey: WCM Luna bar and a Jazz apple.

We got to Isaac’s co-workers house around lunch time. Her whole family is from Ecuador and her mother was in town visiting. They cooked us up a feast of traditional Ecuadorian cuisine.A scrumptious salad with oranges, tomatoes, and a homemade orange dressing, Tilapia with a tomato and mushroom sauce, and hominy. The lunch was so tasty. I think I need to go to Ecuador.

After returning from Bumpass stuffed with Ecuadorian eats we decided the weather was too nice to stay in so we walked down to a friends house to hang outside for a while. They were out on the sidewalk in front of their house, jamming to music, playing games, and sipping alcoholic beverages. We hung out for a while, until ANOTHER one of Isaac’s friend invited us over dinner. We couldn’t pass up more home cooking so we headed over. The menu was veggie friendly (as the friend is vegetarian): pasta with tomato sauce, but as you can tell it wasn’t simply pasta. Homemade tomato sauce and pasta with tomatoes, roasted red peppers, artichokes, olives, and cheeses.

I wasn’t really in the mood for pasta before we went over, but it was so good that I had two plates! On top of that we then received ginger cookies with lemon icing.  After eating 3 1/2 cookies my belly was stuffed. We watched a little of the Braves game and then headed home to crash.

I have been feeling under the weather all weekend, but it didn’t really hold me back from going outside and enjoying the nice weather. I did skip the gym on Sunday and this morning I am still v. congested and my throat is aching. I think it might be allergies/a regular old cold. I just hope I feel better soon. I hate being sick! :(

Jazzy

Where did the weekend go? I ask myself that same question every Sunday.

Oh well, this weekend was realy relaxing and we actually had a full day of sunshine and warmth. Sunday was kind of lazy, I just lounged around the house all morning. Since it was so nice out Isaac and I finally decided to wash my car. It was so dirty!! After my automobile was shining I headed to the gym. I felt so cool driving a shiny car… even the tires were glimmering.

Anyways, my breakfast was normal: oatmeal/ oat bran combo with a T of Better N PB. (I’m all OUT, dang it! I even went to TJ’s this weekend, but I forgot to pick some up.)

For lunch I had a small slice of leftover pizza from Saturday night and a strawberry spinach salad with poppyseed dressing.

This slice of pizza may not look that good in the photo, but let me tell you that it was fabulous, as it should have been considering it was a $25 dollar pizza! That’s $25 for a pizza with ONLY VEGGIES, mind you. Apparently the toppings we ordered were “specialty toppings” that cost $3.50 a piece. Wowza!

This pizza had banana peppers, eggplant, sun dried tomatoes and ricotta cheese. I had never had ricotta cheese on a pizza… ahh so good!

Later in the afternoon after the car cleaning session I had a snack. A JAZZ apple! The sign at Fresh Market said “If you like Honey Crisp Apples, you will love Jazz Apples!” I do LOVE Honey Crisp so I had to try the JAZZ variety.

Apparently, the Jazz variety is a cross between Gala and Braeburn apples, both originally grown in New Zealand. Jazz apples are sweet, crunchy and juicy. They are firm and have a rich sweet flavor. I loved it!

Since it was so nice out yesterday we decided to grill for dinner. I had an Amy’s California Burger dressed up on a Joseph’s lavash wrap with tomato, onion, spinach, and ketchup and a side of grilled Brussels sprouts!
