Sweet Surprise

Hi guys. I am totally pumped that Friday has finally rolled around. The weather is suppose to be nice here today and continue through the weekend so that makes everything 10 times better.

I’ve noticed that I’ve had quite a few new readers/people commenting and I just wanted to welcome you all and say thanks for reading!!

Lets start with breakfast yesterday: Oat bran/Oatmeal combination with Chocolate PB2. In the mix: (1/4 cup each of oatbran and oat meal, 1/2 cup Living harvest Unsweetened Vanilla Hemp Milk, 1/2 of a banana, and cinnamon. Cooked up and topped with about 1 1/2 tablespoons of chocolate PB2 (I promise to put up a review soon.) Creaminess heaven!

I’ve been on a salad kick lately so today for lunch I made another salad. This time the ingredients included romaine lettuce, hickory smoked tofurkey, hearts of palm, sprouts, house dried tomatoes (hehe), shrooms, and hummus.

Notice the green hummus…. it’s Trader Joe’s Edamame hummus and it’s AWESOME. I think I like it better than regular chickpea hummus. Somehow it seems smoother. I want to try making a homemade version soon.

Work went fine and I headed straight to the gym after leaving. I did Tina’s 45 minute Treadmill workout (running). I’ve done it quite a bit since the first time and it’s gotten so much easier for me. I love that! I also did some 3 leg workouts and some abs.

A package was waiting for me when I got home from the gym. I was so pumped to open it as I knew it was from The Fitnessista and I knew it contained her famous macaroons!!!!! I opened the package so quickly-  inside there was a sweet card and 3 delicious goodies neatly packaged: super charge me cookies, chocolate and blonde macaroons.

Of course, as soon as the package was opened I had to try one. I decided to eat  a blonde macaroon while making dinner. Who made the rule that dessert has to come after a meal anyway?

I had been wanting to try Gina‘s Macaroon’s since forever and I even contemplated going to buy a food dehydrator just to try the recipe. Well guess what? NOW I REALLY WANT A FOOD DEHYDRATOR so I can make this macaroons everyday. Okay, maybe not everyday, but definitely every other day. :) I thought my macaroons were good (and they are), but I’m going to be honest and say Gina’s have mine beat!! The whole package smelled heavenly and the blonde macaroon tasted A-MAY-ZING- so moist and flavorful. So delicious in fact, I had to eat another one after dinner! I can’t wait to get super charged and to try the chocolate macaroons! Thank you so much Gina!! And, now I just need to convince Isaac to get me a Excalibur.

After the excitement I decided to have a another salad similar to my lunch, only sans the tofurkey.

On the side I had some unpictured chips and salsa and a Quorn Naked Chik’n Cutlet. This was my first time buying/trying a Quorn product and I found it to be really good. I usually don’t buy mock chicken products because a lot of them are breaded and I would rather have tofu or beans as my source of protein, but this patty was quite delicious. It had a neutral flavor that could be complimented with a varitety of other flavors/seasonings. I was lazy and simply heated it up on the stove top and ate it with ketchup. YUM!

I’m off to work, lunch at Ellwood Thompson’s (they are having their GRAND RE-OPENING!!!), back to work, to the gym and then relaxing at home sweet home for the weekend!!

Wacky Monday

Things are all out of wack here in VA, it’s December 15th and 70 degrees. Seriously I’m not complaining because this is great news for my outrageous heating bill, however 70 degree weather is just not really suppose to be happening right now. It’s suppose to be snowing so I can walk in a winter wonderland and make snow angels. On to other things out of wack – today doesn’t feel quite like a Monday. Maybe a Tuesday or a Wednesday, but def. not Mon.

Whatever, it is warmer outside than it is in my house and it is Monday and this is what I decided to eat for breaking the fast. 1 egg, 1 egg white omelette with a bit of onions, spinach, and some feta cheese. Served with a side of fresh made (not by me but by Joe from TJ’s) salsa and Morning Star veggie sausage (one link and one patty.) I decided, after eating the links several times, that I don’t like the links at all – maybe I’m cooking them incorrectly but the texture on outside of them is just wrong.

For lunch I walked home from work with NO coat and made a quick salad with some romaine lettuce salad with hearts of palm, 1/2 an avacado, and sprouts and a litte TJ’s Goddess Dressing. Yum – I like the TJ’s brand better than Annies.

I did eat dinner tonight, but I have left overs and I’m going to eat those for lunch tomorrow – so I’ll leave you all in suspense as to what I ate this eve.
