Holy Guacamole!

After all that Cinco De Mayo hype guess what we decided to do? Stay home, eat guac and tacos and do work. I had a press release to work on and Isaac is prepping for his summer of torture training. It’s not really as bad as I’m making it seem, it’s just a really intense program and he’ll be gone for most of the summer. I’m gonna miss him hardcore.

Anyways, back to last night. Thanks to Isaac’s wonderful mashing skills our guacamole turned out fabulous.

The guac was the main entree and was served with a side of shrimp tacos.

Shrimp, green pepper, red onion, garlic, and salsa all wrapped up in a Reduced carb Wheat tortilla from Trader Joe’s.

Perfect Cinco De Mayo meal! And, best of all we have left over guacamole.  This, I am very very excited about. I almost had it for breakfast but got distracted by the fact that we have  9 boxes of cereal to choose from.

I actually have to admit that the only cereal I bought myself was the Kashi Go Lean (my fav). All the Barbara’s Bakery cereals were purchased by Isaac. He called me yesterday from the grocery store really excited because all Barbara’s cereals were on sale for $2.14 a box! (Usually Barb’s cereal is over $4.) Seriously, it was too cute how excited he was about cereal being on sale. Needless to say, I requested PB Puffins.  He picked 3 other boxes. I’d say were set on cereal for a while!

I was enticed to try the Ultima Pomegranate this morning.

Topped with 1/2 banana, sliced strawberries, and unsweetened almond milk.

The ceral was really good, I liked it better than I thought I would. The whole grain flakes had a nice crunch to them and it was sweet, but also had a hint of tang. I also spotted some plain oats in the mix.  I was a little bummed to read that one serving is only 1/2 a cup, but then again the 1/2 only has 100 calories. Overall, I liked it but I Kashi Go Lean still ranks highest in my book.

Today was really busy at work- but for a good reason – we won an award- woot woot! But anyhow, I am heading to the gym tonight. I was thinking about skipping it, but I’m doing The Fitnessista’s Summer Shape Up and I really want my 3 points for toaday.

Weekend: B-Ball Style

Saturday was a busy and fun-filled day. After meeting up with the lovely Christie for lunch, going for a quick run, and showering up, we headed to the game. Mason won against JMU so we are going to another game today at 5:30PM: Mason v. Towson…  I can’t wait. Since I knew the game was at my normal dinner time and the food situtation at games isn’t great I packed up a fake PB sammie. I ate 1/2 on the car ride to the Coliseum and stashed the other half in my purse. There was a guy checking purses- he spotted my pbj and wanted me to toss it. I complained a bit then he FINALLY let me through. Seriously- I could have had a weapon in one of the side pockets and all he cared about was my stupid sandwich. Oh well… I won against that doorman and I happily ate my sandwich while watching MASON beat up on JMU!!

2 slices of honey flax bread, 1 tbsp better n pb, and 1 tbsp sour cherry preserves. I ate bites in between loud clapping and cheering. I was doing some serious cheering!! Although, I was never really into watching b-ball before college I’m pretty into the Mason games now. Olive, on the other hand.. she’s been a pro baller since birth. I’m not kidding- here’s the proof:

After the game, my sweet sweet friend was waiting at my house for me. We had plans to go see a band play at Baja Bean Company. We decided to have some girl chat time and walked to the bar- it was such a nice night out  and we had a lot to talk about so the time went by quickly. My friend hadn’t eaten dinner so she ordered a shrimp salad and a guacamole platter that come with a ton of chips, guac, a sweet corn salsa with red peppers, and a black bean mango salsa. Of course, I love guacamole, salsa and chips so I had to help her eat the platter. Here’s a picture of the corn salsa and a side shot of the guac mid way through eating…

We trekked back home around 1 and crashed. I had a blast minus any alcohol. All I drank was soda water. Which, btw, I got fo free! I can’t believe some places charge for it (it’s water people). Anyhow, it was free last night and I was excited.

This morning, I woke up way later than usual, due to the late night and the time change. I ended up having the same b-fast as yesterday- a veggie sausage and kashi go lean with almond milk. Only today I had granola as a sub for the protein powder because I’m all out. Which leads to my agenda for the day- I’m getting dressed, heading to the grocery- probably TJ’s and Whole Foods, working out and then going to the b-ball game. Still got my fingers crossed for a big win!
