Don’t try this at home…

unless, of course, you want to make a delicious sandwich.

Sesame ezekiel bread, spinach, red onion, tomato, hummus, avocado, and pepper jack cheese grilled to perfection. I used the tea kettle and an extra pot to put pressure on the sandwich. Miraculously it stayed balanced and the sandwich turned out great!
Besides whipping up homemade panini presses in my spare time I’ve also been playing around with my new camera lens.

Oats a cookin’.

Oats for eatin’ – with chia seeds, almond butter and a lonely fig. For some reason, maybe because I haven’t had banana oats in a while, this bowl of oats was particularly delicious.
Lunch today was quickly tossed together – sauteed zucchini and onions

and a gourmet spinach salad with roasted beets, wheat berries, cherry tomatoes, sun-dried tomatoes, and a blob (I just typed blog) of hummus.

Amazing!
After running 3 miles with a bunch of women in skirts this afternoon all I could think about were crispy sweet potato fries.

I had a big plate of them for dinner because sometimes, fries are just what you need!
I have quite of bit of stuff on my mind tonight so I apologize for such a short and simple post. I promise to have more exciting and useful content ASAP. Until then…
