Holiday Week

Why can’t all weeks be holiday weeks?

I’d meet up with a workout buddy at the gym every morning and then eat pumpkin pie overnight oats – topped with grated coconut.

And we’d have a potluck at work every Tuesday…

For yesterday’s potluck I made my veggie stuffed hummus sandwiches and they were a hit.

I felt like I was back at Foodbuzz Fest as a Nature’s Pride Bread Ambassador presenting for the crowd. Only this time I was in my own kitchen, prepping my own ingredients with an audience of 2, 3 if you count Olive. :)

A couple of my co-workers had been begging me to make the sandwich since last November, so I finally got my act together and made mini sandwiches for the party. Almost everyone who tried them commented on the fact that the flavor profile was good and they really liked them. Even non-hummus lovers said they were delicious.

I must admit, I ate 3 of these little squares myself. :) I think the basil hummus and slightly spicy, slightly sweet peppadew peppers are what make the sandwich!

There were so many other yummy dishes but a lot of them involved meat so I stuck with the sandwich, a bite of green bean casserole, salad and a deviled egg.

Then came dessert…

The highlights for me were the two homemade treats – Double Chocolate Pumpkin Cheesecake (made by my boss) and a Banana Streusel Pie (made by a MALE co-worker). Guys can bake too, ya know?

I had a sliver of both and literally fell in love (had to get a second silver). The chocolate pumpkin cheesecake was smooth and luscious, but dangerously rich. And, the banana strudel tasted like an apple pie only with bananas. I’m a banana lover so this was right up my alley. Although, I did go back for tiny bites of seconds, I was proud of myself for not over doing it with the potluck, especially the desserts because as you can tell – they were tempting!

By the time dinner rolled around I had gained a bit of an appetite, which was good because I met a friend at Ellwood’s for the hot bar.

As always, the food was delish – I particularly liked the tofu cacciatore. Yum! The company was grand as well – Dana and I chatted about life, blogging, and other fun stuff for well over an hour. It’s always so much fun to meet up with online friends in real-life!

Especially when they bring you homemade Pizzelles that taste heavenly.

I tried one last night and then ate one as part of my breakfast this morning. Hey, it’s a holiday week so eating cookies for breakfast is totally acceptable. ;)

Today is going to be a half day for me at work and then I’m free until Monday. There will be lots of cooking, eating, and playing with friends and family stuck in between. Woo-hoo! Enjoy your Wednesday friends.

Highlights of the Week

This week has gone by without much time to post so I figured I’d do a recap with the highlights.

Monday the marketing team at work went out for our monthly lunch. We decided to try out a new restaurant in town, Xtra’s Cafe. The menu had a ton of tasty sounding options and plenty of veggie friendly fare- all reasonably priced. I went with the soup and salad combo – vegan minestrone and the garden salad with roasted pineapple vinaigrette . I added a bit of grilled tofu to the salad for some protein and requested no croutons.

The soup was served in a really cool bowl and everything tasted super fresh. The grilled tofu, which can sometimes taste bland, had a nice flavor, and the roasted pineapple dressing was amazing! Definitely a winning combination in my book.

For breakfast I’ve been eating lots of the norm – pumpkin spice smoothies and stove top oats with chia seeds and spoonful of almond butter.

A couple mornings I even threw a little pumpkin into the mix.

I know you might think I ONLY eat oatmeal for breakfast, but I promise I occasionally switch it up. Allllthough, I do typically stick with oats because it keeps me feeling full way longer than anything else. ;)

Per the norm, salads have been taking over lunch time.

I heated up a batch of tiny sweet potato quinoa cakes and served them on a bed of spring mix with goddess dressing, mini grilled shrimp, tomatoes and carrots. Ezekiel toast with a spread of Laughing cow swiss cheese and cranberry chutney.

I know it doesn’t look that appealing but it tastes better than it looks.

Tuesday night I attended a healthy habits class at a local Wellness Centre. It was about eating healthy, decreasing stress and going to the chiropractor. The ladder makes sense because the session was put on by the chiropractor himself. Most of the information was stuff I already know but I did learn more about fish oils and the Paleo diet – both of which are quite interesting. I also received a free chiropractic session for attending and my appointment is scheduled for next week. I’ve never been to a chiropractor but with my back and leg issue still going on I’m excited to give it a try. As an update, I went to my second session of acupuncture this week and it went well, although I haven’t noticed any improvements yet.

Wednesday night I wanted a salad for dinner but didn’t have any toppings so I picked up some local fu’, edmamae salad and sprouts from the Ellwood’s salad bar.

Last night was definitely the highlight of the week dinner wise! I made a crock pot of Kath’s Curried Butternut Squash Soup.

Kath served the soup both times I went to her house recently and I knew I needed to make the recipe for some of my soup loving friends. They came over last night for dinner – Isaac and I provided the soup, they brought the bread and wine and we had a grand ol’ time.

I made a few small changes to the recipe by using 4 cups of water and a veg. bouillon cube instead of veggie broth, 3 sweet potatoes instead of the navy beans, and 2% milk in place of the whipping cream. It turned out great – sweet, creamy, and most importantly flavorful!! If you like curry, I’d definitely recommend giving Kath’s recipe a try!

Alright, I think I’ve featured enough soups, salads, and oats for one post. I’m off to enjoy the weekend by meeting friends for sushi! Enjoy your Friday night!
