Bean Head

T minus one until Friday. I’m pumped. We have a wedding to attend on Saturday in Virginia Beach and the bride and groom at hosting their own Run/Walk to the Alter 5k Saturday afternoon. I don’t know if I am going to be there in time to run the race (plus my left knee is swollen ???), but I think it’s a very cool idea.

Anyhow, yesterday my company went out to lunch at PF Chang’s. We were celebrating an award the company received as well as sending off an employee who was leaving to take a full time position elsewhere. I love PF Changs so I was v. excited we went there. The table ordered lettuce wraps (chicken and veggie). I LOVE the vegetarian lettuce wraps – I usually contemplate getting the wraps for my meal every time I go.

Needless to say, I had two of those oh so yummy wraps. I strayed from my normal Buddha’s Feast and ordered the Bikini Shrimp Salad as my meal (hey, it’s almost summer right?)

The salad had a ton of spring mix, about 6 large shrimp, watermelon balls, and some toasted walnuts. I ordered the dressing on the side and ended up using a bit of it. I couldn’t tell exactly what it was, but it definitely had a citrus look and taste. Overall, the salad was pretty good, but I missed Buddha. :(

And for a quick recap of today’s eats.

Oatmeal/ oat bran combo with 1/2 a banana cooked right in, sprinkles of a few walnuts on top and  a spoonful of better n pb.

I ran, and by ran I mean walked, home for lunch and prepped a quick salad.

I used my last slice of Tofurkey (gotta get more of that!) and topped the salad mix of romaine, cucs, tomatoes, and carrots with TJ’s edamame hummus instead of dressing. I had some deliciously ripe cantalope on the side!

After work I headed straight to the gym and decided to have beans with a side of beans aka edamame and a black bean burger for dinner.

I’m still eating the combo black/garbanzo bean burgers I made a few weeks ago and froze. It’s the perfect meal when I want something fast. I topped the burger with left over guac and a slice of tomato. There was also a hidden pile of ketchup on the side. :) Perfection!

A couple people having been wondering what Olive has been up to. Well, she’s lost 2 baby teeth (we found them on the couch this week). I’m not sue if that’s the reason behind this little smile of hers or not?

Sunday Funday

Today Olive and I were on our own and the day ended up being all about Olive. She got to go on a walk in her new harness, ate lots of treats as I tried to train her to do the loose leash thing, and she got a spa treatment (aka a bath). It was fun.

So I realized that I haven’t posted my grocery store purchases before (at least not that I can remember) so I thought my last visit to Trader Joe’s would be good to highlight.

Some Highlights:

  • Designer Whey Protein: I really like the chocolate, it only has 100 calories per scoop and tastes pretty good. This was my first time buying the French Vanilla so I’ll be sure to let you all know how I like it.
  • Kashi Go Lean: One of my favorite cereals
  • Spring Mix and Broccoli Slaw: Two items I like to buy at Trader Joe’s- their bagged salad is the cheapest I’ve found!
  • Organic Pea Shoots: Something new that I decided to try this time. 

This morning I woke up hungry for some pumpkin oatmeal. New ingredient alert- golden raisins!!! I also used a 1 tsp. the Sucanant again. I’m really missing the sweetness of my banana oats. I need to get to the store and buy some naners asap.

This breakfast held me over really well. I went to a Body Attack class, walked on the treadmill, and did some arm work. I came home around 1:45 and whipped up some lunch. HUGE salad:

All the usual ingredients, with hot banana peppers and the pea shoots (the shoots are leaves of the pea plant with a subtle sugary flavor that is delicious both raw and cooked.) I had some hairy edamame on the side.

Isaac and I had plannin on having dinner together, but he got held up coming home from the Frisbee Tournament so I decided to go with Isaac’s mom and sis to Ginger Thai Taste. Isaac’s mom and I shared the Green Papaya Salad as and appetizer and I ordered the Ginger Perfect- Sauteed green onions, mushrooms, ginger, and bell peppers in a house special sauce with shrimp. I also asked for broccoli.

Now I’m just watching Jon and Kate plus 8 and waiting for my love muffin to come home. Sunday is almost over.. boo hiss.
