Yes!! It’s the weekend!!
Here’s how it all started. I woke up early Friday for a morning workout. Before heading on my way to the gym I decided to have half of a new bar from my bar exchange with Laura. I actually hadn’t heard of KeriBars until Laura offered to send me a few in my package of bars. I was super excited to try this one. Especially because of the flavor: Apple Peanut Butter

INGREDIENTS: Brown Rice Syrup, Peanut Butter (Dry Roasted Peanuts, Salt), Apple Juice Concentrate, Rolled Oats, Evaporated Apples, Dry Roasted Peanuts, Whole Flax Seed, Brown Rice Crisps (Brown Rice Flour, Rice Flour), Brown Rice Protein Concentrate, Soy Crisps (Isolated Soy Protein, Tapioca Starch, Salt), Inulin, Gum Arabic, Natural Flavors, Canola Oil, Soy Lecithin, Salt, Cinnamon.

When looking at the package before opening I thought the bar was going to be really small. Turns out it was a good size bar and tasted really good. It was much crunchier than I expected, but in a good way. The apple and peanut butter flavors went perfectly together (what doesn’t go with PB?) and there also seemed to be a cinnamon flavor that was pronounced throughout. I liked it a lot!
The nutritional facts are pretty good as well. Despite the fact that there are 2 natural sweeteners (brown rice syrup and apple juice) at the beginning of the ingredient list, the sugar content for the bar is quite low. Lots of the other bars I have tried have around 20g of sugar so I thought that was good. And 6g of protein and 5g of fiber isn’t too shabby either. I can’t wait to try the other flavor (strawberry chocolate chip )Laura sent me, and maybe I’ll be able to try the Cherry Almond flavor at some point. The kicker: I don’t know where to find the KeriBars. I have yet to see them at any store near me, but the website says they are available at available at Food Emporium, Dylan’s Candy Bar and GNC.
After a pretty quick workout on the stairmill and the treadmill I came home, got dressed for work and then settled down for a minute to eat a bowl of Kashi go lean with chocolate protein powder and USAM.

I was so tempted to go out and buy something for lunch, but I was good and decided just to go home and make a salad. It turned out to be a good idea:

Salad consisted of lettuce, hickory smoked tofurkey, brocc, green pepp, sprouts, and tomatoes.
After work the CEO and some others were going to get a glass of wine so I decided I would go with. I ended up have about 2 glasses of red and a few bites of cheese from the cheese plate they ordered. It was nice out so we sat outside and Isaac came to join us. It was fun.
After the wine rendezvous I met up with a friend. She and I had plans to cook dinner for our boys and eat outside. We walked to the grocery store to get a few last minute things and then prepared dinner. (while drinking more wine)

Lemon salmon with rosemary was the main dish. And, we had brown rice and green/yellow beans on the side. We also had a salad with dried cranberries, almonds, avacados, tomatoes, and carrots. (But I forgot the picture)
The fish turned out perfectly- and it was so easy. We basically just layed slices of lemon and rosemary in a baking dish, drizzled a little olive oil on the fish with S&P and then baked the fish (skin side up) on top of the lemons and rosemary. The salmon soaked up all the flavors while baking for 20 minutes on 400.The boys loved it!!
I don’t have any big plans this weekend. I’m headed to go for a run outside because the weather is gorgeous and then later today Olive and I are going on a road trip to see my family. I have to make a dish for today’s early Easter celebration with my Dad. Then I’ll be hanging with my sister, nieces, and mom tomorrow. It should be fun. I hope my nieces want to dye some Easter eggs.
