Did you know that chia seeds oats are pretty much the best thing ever for breakfast? Well, they are! They are both tasty and filling and I’ve pretty much fallen head over heels for them. Hence the reason I eat a bowl almost every day (when I’m not having smoothies, of course). This photo is actually making my mouth water right now.

Especially that spoonful of PB&CO cinnamon raisin swirl pb. <–When I went to go find the link for PB&CO I got hooked on the website for a while- day dreaming about all the amazing sounding sandwich options they serve at the PB&CO Sandwich Shop in NYC. Isaac and I are planning to take a trip up to NYC at the end of this month and now I really want to stop by and get The Elvis- A grilled peanut Butter sandwich, stuffed with bananas and honey.
After a morning at the office, I went home for lunch for a quick and colorful salad of baby romaine, cucumber, tomato, broccoli, feta cheese, chopped red cabbage and Rachel’s Wickedly Delicious Cucumber Dill Cottage Cheese on the side.

I didn’t know what I would think about the cucumber dill flavor, but surprisingly it was tasty and the perfect topping for a salad. I’ve been impressed with all the Rachel’s cottage cheeses I have tried!
After lunch I headed back to the office for some productive work. The highlight of my afternoon came around 3 when I pulled out my snack. As I mentioned previously, I was extremely excited to try the latest and greatest LARABAR flavor – Peanut Butter & Jelly.

Did it live up to the anticipation? Oh YEA!! It tasted just like my mom’s PB&J sammie- it took me right back to grade school when I used to pack a peanut butter and jelly sandwich for lunch everyday! I’ll definitely be buying this bar as soon as I find it in a grocery store near me. I’ve been looking but haven’t spotted it.
