I just had the best home made dinner I’ve had in quite a while- Raw zucchini pasta with an almost raw sauce. What’s funny is that I hadn’t planned this meal at all, it just sort of happened, yet it turned out fabulous.
The best part is that I got to use my new AS SEEN ON TV Titan Julienne Blade – so random, but Isaac just so happened to buy me this last night at the grocery store. I’m not kidding. I promise I don’t stay home all day watching infomercials and buying things, even though we do have Snuggies (they were a gift) and now we have this.
Of course, my first thought when Isaac gave it to me was zucchini pasta and the stars were aligned because I had 2 zucchini squash sitting in the fridge. I julienned (is this a word?) them both tonight and then stood in the kitchen perplexed thinking of a sauce to make. Just as I was reaching down in our cabinets to grab some boring Classico I saw 2 jars of canned tomatoes from Isaac’s parents’ garden last summer.
My creativty was at an all time peak tonight for some reason- I grabbed the Vita and whipped up a tomato sauce on the fly.

Could Be Raw Tomato Sauce (serves 2)
- 3 large canned tomatoes (for raw pasta sauce use fresh tomatoes)
- 7 fresh basil leaves
- 1 small handful of fresh rosemary
- 1 tsp. garlic powder
- 2 cloves of fresh garlic
- 1 tsp. olive oil
- 1 tbsp. balsamic vinegar
- SS (sea salt) & GP (group black pepper)
Place all ingredients in the blender and blend for all of about 10-20 seconds and ta-da… you have yourself some (Raw or Unraw) TASTY Tomato Sauce.

I served my sauce over the freshly julienned zucchini pasta:

I’m not trying to toot my own horn, but seriously this was DELICIOUS. It’s gotta be one of the best tomato sauces I’ve ever had and I loved the zucchini pasta. If you haven’t tried zucchini pasta I highly recommend it- you don’t need any expensive equipment- a simple peeler or grater will do the trick. I don’t think I’ll ever buy Shirtaki noddles again- who needs stinky noddles when you’ve got veggie noddles.
I went back for seconds then stopped eating half way through because I wanted to show off my sweet skills save some for Isaac to taste. He loved it as well and said I needed to make a big batch, which I totally plan on doing sometime very soon.
