Hummus and Avocado Cakes- The Best Snack of Summer 2010

by Eating Bird Food on July 28, 2010

I had the best dinner tonight! It was pieced together with two very interesting items (note that Isaac wasn’t home for this dinner), but it’s way too good not to share with you all.

1.) Baked sweet potato with cottage cheese and ketchup.

I know it sounds odd, but if you’ve been reading EBF for a while you’ll know I really like this combo and if you’ve tried it for yourself, you’ll know that despite how crazy it sounds/looks, it’s quite delicious.

I have the lovely Jenn from Eating Bender to thank for introducing me to it!

2.) Hummus and Avocado Cake

I told you it was an interesting dinner…

Although I would love to, I can’t take the credit for coming up with this delicious treat – my friend Laurel actually told me about this little combo, and I can’t be completely positive, but it might just be the “it” snack for summer 2010!

Hummus and Avocado Cakes (2 cakes)

  • 2 brown rice cakes (I used Lundberg)
  • 2 tbsp. garlic hummus (Sabra is my fav)
  • 1/2 of an avocado, sliced
  • cayenne pepper, to taste

Spread an even amount of hummus over the rice cakes, top each with 3 slices of avocado (about 1/4 of an avocado on each cake) and smash it a little to spread it out, sprinkle on the cayenne pepper ( I like it HOTT) and enjoy!

In other exciting news, the Candy Valley Cake Pops winner is #33, Anna!

Congrats lady. Shoot me an email (eatingbirdfood at gmail dot com) and your dozen Cake Pops will be on their way!

While Anna jumps up and down after finding out she’s won, I think I’ll do Somersaults.

And by do, I mean eat them. Actually, I’ve been snacking on these a lot today- after both lunch and dinner. They are small baked treats made with toasted whole grains and sunflower seeds. I like the not-too-sweet chocolate flavor of the chez cocoa variety and the crunch factor. With the first ingredient being sunflower seeds, they’re different than any other snack item I’ve ever tried. If I had to describe what the chez cocoa somersaults are most similar to, I’d say mini cookies- only they are better because the ingredient list is short and they provide a good amount of both protein and fiber.

IMG_5864.JPG

I haven’t tried the other flavors yet – s.s. sea salt, salty pepper, and santa fe salsa, but you can bet I’ll be digging into those later this week.

The Somersault Snack Co. sent me these to review, but just so you know, I only state my true feelings about the products I review. In addition, I only accept products for review that I would be interested in buying myself if I saw them in the store. Speaking of which, I’ve seen these snacks at my local Whole Foods and you can always “like” Somersault Snack Co. on facebook for a possible chance to win a summertime snack giveaway.

Alrighty, I’m off to bed folks. It’s been a long day – we moved offices at work so I actually did more than sit on tush for 8 hours. It felt great to move a bit while at work, but now I’m sleepy.

Sweet dreams (of hummus and avocado cakes) to you!

What’s Eating EBF?

by Eating Bird Food on January 4, 2010

These little morsels of goodness!

IMG_2990.JPG

Homemade chocolate covered peanut butter filled pretzels! (A delish gift from Isaac’s bother’s girlfriend.)

Need an homemade gift idea for Valentine’s Day or even next Christmas? Add these to your list because let me tell you they’re GOOD! Too good to have sitting around the house, that’s for sure. I ate 8 of them in one sitting (before noon). Oops.

Despite the above sugar overload I have been eating healthier meals, although last night’s dinner was a sweet treat as well.

Sweet and Sour Chipotle Tempeh with Sweet Potatoes with Coconut Lime Basmati Rice from Eat, Drink, and Be Vegan. (*The photo below is the perfect example of why I don’t like taking food photos at night!)

IMG_2992.JPG

I was a bit nervous because my local store was sold out of my fav tempeh, LightLife’s Three Grain- one of the milder varieties. I ended up settling for the Lightlife’s Wild Rice variety. To avoid the bitterness and make certain the flavor would be mild I used a trick of the tempeh trade and steamed it in 2 cups of vegetable broth for about 20 minutes. The tempeh turned out to be tender, had no bitter after taste, and worked magnificently in the sweet and sour dish.

The combination of peppers, sweet potatoes, tempeh, and pineapple topped with an extra sweet sauce and cashews made quite the tasty meal. And although I enjoyed the coconut lime basmati rice, I wished I had served the S&S tempeh with a plain brown rice, quinoa or couscous. The sweetness of the sauce was more than enough for one meal, however I felt fine eating it because all the sugary goodness came from natural sweeteners. As an added benefit, a delicious smell completely filled the house while it baked! I’ve said it before, I’ll say it again- every recipe I’ve tried from ED&BV has been awesome. Dreena never fails me!

Since this morning was my first day back at the office I knew I needed some extra super charging to get me motivated. I had an Ezekiel muffin with better n pb/maca (superfood!!) and cottage cheese topped with (leftover) canned pineapple.

IMG_2995.JPG

And for lunch: raw kale salad and a pita stuffed with tofukery, tomatoes, hummus, and kale.

IMG_2996.JPG

I un-rawed the kale salad by adding a little TJ’s goddess dressing.

IMG_2998.JPG

And tonight for dinner I had more of S&S tempeh and it was just as good the second time around.

I’m off to do a yogadownload.com video, Whittle My Middle, relax, and get ready for another day at the office!

Mystery Revealed, Pizza, and Other Weekend Eats

January 3, 2010

My second visit to Pizza Fusion occurred this weekend when Isaac’s mom and I were on a search for a restaurant that was open past 7 PM on New Year’s Day. On my last visit I ordered the Farmer’s Market Signature Pizza on multi-grain crust with soy cheese. Despite being topped with a multitude of [...]

Ringing in 2010

December 31, 2009

Thank you guys so much for all your well wishes on my last post. Losing a loved one is never easy but seeing your kind comments definitely brought a smile to my face. Isaac attended the ceremony with me, we grabbed lunch and then headed back to Richmond to unwind for the rest of the [...]

The new Crisper

May 13, 2009

Tuesday’s eats were v. similar to that of Monday’s. I started with the banana oats, although this time I spruced them up with a little ground flax. The variety of flaxseed I have currently is from Trader Joe’s. (Golden Roasted Flaxseeds). I don’t love the flavor/smell of the roasted seeds so I think next time [...]

Clean Eats

May 11, 2009

I haven’t done a full days worth of food for a while so I thought today would be a good day to feature everything. I’m doing the Summer Shape up and I think I did a good job at clean eating today. I started with a simplistic breakfast this morning. 1/4 cup oat bran, 1/4 [...]
