On the Menu, Yesterday

Sometimes it’s fun to see what others eat daily so I thought I’d kick it old school EBF style and share a full day of typical eats…

I took photos of everything, but forgot the apple, almond and peanuts I ate for a mid-afternoon snack, the La Croix I drank at some point during the afternoon and the mug of coconut chai tea I had after dinner.

Here’s the line up:

Upon waking, I had a cold brewed iced coffee with frothed almond milk. I had kind of forgotten about my mini frother so it was fun to pull it out yesterday and make fancy coffee.

For breakfast I had a protein pancake. This time I used 1/2 banana instead of the figs and topped it with blueberries and almond butter.

I’m loving the roasted almond butter with flax seeds from Trader Joe’s. It’s so crunchy!

Lunch was a “throw everything that’s in the fridge on greens and make a salad” kind of day. I had a big bowl of spinach with lots of left over grilled veggies (squash, onion and eggplant), corn from the cob, orange bell pepper, broccoli slaw with peanut sauce and garbanzo beans.

I love these types of salads – they’re so flavorful, you don’t even need any dressing!

To soothe my craving for something sweet after lunch I busted out the Power Snacks I was sent to review from Navitas Naturals.

I had three of Cacao Gogi bites and liked them. They weren’t too sweet, but definitely took away my sweet tooth. I haven’t tried the Citrus Chia flavor yet, but once I do I will certainly post a full review.

And last but not least, for dinner I had Isaac grill some bbq tempeh when he was grilling burgers for he and his dad.

While he was grilling I prepped some veggies.

Butternut squash fries are back! <– This is so exciting to me as I love butternut squash and it’s a true sign that fall is drawing near. Bring on the pumpkin and squash!

All together I had the tempeh, quinoa, b-nut squash fries and collard greens.

Everything was delish, but the fries were the highlight of the meal for me. The squash was actually from Isaac’s parents garden and it was amazingly sweet! Since I had something sweet with dinner, I ended up being able to resist my normal after dinner snack. This was a big achievement for me because I’m the queen of after dinner snacking. A current goal of mine is to kick the habit of eating snacks because I’m bored or just wanting something sweet. So far so good!

So there you have it friends, what I ate yesterday! Now it’s time to focus on today because it just so happens to be Friday and I have a three day weekend to look forward to!

Do you have any plans for the holiday weekend? We have a wedding to attend and I’m hoping to host or go to a cook-out. Gotta enjoy the warm weather while it’s still around. It will be fall before we know it!

Mellow Lentil Sniffle Soup

After my package extravaganza on Monday, I consciously remembered to eat less out of the box today by preparing all whole, real foods. To start I made stove top oats with oatmeal, oat bran, 1/2 banana, raisins, cinnamon with a spoonful of almond butter on top.

I think I could eat oats for breakfast everyday for the rest of my life and be perfectly content. They’re warm, delicious, and super filling! What more could you ask for from a breakfast item?

For lunch, I had homemade lentil soup. Eat, Drink and Be Vegan proved it’s loveliness once again with Mellow Lentil Sniffle Soup. I don’t have the sniffles, however it is getting quite cold out here in VA and this warm soup was the perfect meal.

Isaac and I both had a bowl for dinner last night. He packed another bowl for lunch today and I came home and warmed up a bowl for my lunch as well. The soup is very flavorful but I decided to spice it up with a few squirts of sriracha sauce mixed in. Twas delicious. Yet another reason I would highly recommend purchasing Dreena’s awesome cookbook.

I was going to have more soup for dinner but I decided to switch things up a little / save some for tomorrow. Plus we had a huge butternut squash just waiting to be chopped up. I decided to have a big salad with some butternut squash fries on the side. When I was taking the butternut out of the oven I remembered the Falldorf Salad I had a while back and was inclined to put some of the squash on my salad.

Once again, butternut squash in salad proved to be a winner. The other ingredients included homegrown lettuce, cucumbers, broccoli, shredded carrots, sprouts, dried cranberries, hearts of palm, and TJ’s goddess dressing. It was quite tasty and filling.

After dinner my friends dropped by to bring me a special treat. I tweeted about it, however I think I’ll wait to share what exactly the treat was. Here’s a hint, it’s a homemade fall dessert and it rhymes with lumpkin nuff. They not only brought the tasty little treats but they also brought the recipe to make them! My friends know me well. :)

It’s getting late so I must go to bed. Good night friends.
