Two Times the Tofu

My left over tofu made it’s way onto my salad today at lunch, along with some wheatberries. This was a delicious lunch. And, today was pretty productive, I went to Barnes and Noble for a couple hours this morning and read books about career finding and marketing and then went over to the health/fitness/dieting section because that’s always where I am drawn to. Which still leads me to believe I need to combine my passion for health and food with my degree in marketing…. no such luck finding any options to do that as of yet.

I went to the gym. Then surprise… for dinner I ate some more tofu:

This time I reheated some bulger and layered on a heaping pile of sauteed squash and tomatoes. Then added the left over spicy tofu. I promise I only have one more piece to eat so you won’t have to look at any more tofu pictures for a while.

Last but not least, Isaac would be excited to know I posted this, however he will not know, because he doesn’t read my blog.

Here is Isaac driving our new Bentley that I was able to buy with all my money while being unemployed that Isaac was able to take me for a ride in while waiting to pick up his boss. By the looks of the car you would think his boss is a gansta, I promise he is just a middle age white guy.

Spicing up Tofu

I was inspired a while back from Gliding Calm’s post about baked tofu and I had her star ingredients photo saved on a stickie note (on my desktop screen) so I would remember to make some in the near future.

 I used the ingredients she had listed to make a sauce/ marinade: sesame oil ( i used hot sesame oil), ground ginger, rice vinegar, sweet chili sauce, garlic powder, red pepper flakes, honey, and soy sauce. I sliced my tofu into 6 pieces about 1/2 inch thick and put them in the bowl with the marinade so all sides would be covered. I put the slices on a baking sheet in the oven at 425 degrees for about 25 minutes. The tofu turned out really well -maybe I added one to many shakes of the red pepper flakes or the hot sesame oil because it was quite spicy.. but I like spicy so it was okay. I will definitely be making this again.

On the side I had yellow squash and butternut squash sauteed with olive oil and some bulger.
