Ultimate Peanut Butter Banana Pudding

by Eating Bird Food on May 31, 2011

I saw these vanilla wafers in Trader Joe’s this weekend and I knew instantly that I needed them.

ultimate vanilla wafers.JPG

They’re like the classic Nilla wafer but with a stronger vanilla flavor and a rich buttery taste, two characteristics that the Nilla seems to be missing. TJ’s wafers have vanilla beans, natural vanilla, real sugar and butter where as Nilla have artificial vanilla flavoring, high fructose corn syrup and hydrogenated oil. I was sold.

I don’t buy packaged cookies just for snacking, but I had a special plan for these.

It included Greek yogurt, peanut butter, truwhip (I love that there’s now a natural whipped topping on the market!) and almond milk.

A dash of cinnamon.

And bananas. Can’t forget the bananas.

Let me present to you, the final product – ultimate peanut butter banana pudding.

Peanut butter banana pudding.JPG

It’s decadent, sweet, semi-healthy (there’s Greek yogurt and fruit involved) and most important- it tastes amazing!! Some might even say it’s the best banana pudding they’ve ever had. I wouldn’t argue.

The recipe isn’t my own as I found it over at Peanut Butter Boy’s blog, but I made a few modifications and used specific products so I’ll post my version below.

Ultimate Peanut Butter Banana Pudding

Adapted from Peanut Butter Boy’s Peanut Butter Banana Pudding

Ingredients:

  • 1 cup non-fat, plain Greek yogurt
  • 10 oz Truwhip, thawed for 30 minutes
  • 2 cups unsweetened vanilla almond milk
  • 1/3 cup natural creamy, unsalted peanut butter
  • 1/2 t cinnamon
  • 2 small boxes (3.4oz ) non-fat, sugar-free instant vanilla pudding
  • 1 container TJ’s Ultimate Vanilla wafers
  • 2 bananas, into thin slices
  • sweetened cacao nibs or dark chocolate to garnish

Preparation:

  1. In a mixing bowl whisk together the Greek yogurt, peanut butter, whipped topping, almond milk and cinnamon until no clumps remain. Stir in the instant pudding until well incorporated and mixture begins to thicken.
  2. In a large glass serving dish/trifle bowl, form a layer of wafers. Cover with a thin layer of pudding, followed by a layer of banana slices. Add another thin layer of pudding and repeat. The size of your serving dish will determine how many layers you can make. 2-3 layers is typical.
  3. Top with a few vanilla wafers and garnish with cacao nibs or dark chocolate pieces.
  4. Refrigerate for at least 2 hours before serving.

If you like banana pudding and peanut butter, this recipe is a must try! The combo is basically a match made in heaven! No joke.

I hope that your Tuesday is off to a great start and that this recipe helped to brighten your day.

If not, maybe this face will.

Question – I’m curious, did you grow up eating banana pudding? If so, was it the baked or non baked version? I grew up with the a non baked version so that will always remain my favorite.

My AM Routine

by Eating Bird Food on January 8, 2010

After detailing my latest obsession with morning yoga in my last post, I thought it’d be fun to let you in on my morning routine Monday- Friday.

What time do I wake up? Between 6-7AM, (depending on my motivation and whether or not I plan to go to the gym).

Gym days: If I do intend on going to the gym I like to be there at least by 6:30, however if I’m slow moving I can stand to get there at 7. I workout for about an hour (a mix of cardio and strength training) and in order to have adequate time to get ready, I leave the gym no later than 7:50 so I can be home by 8. I shower (if needed!), get dressed, and usually I’m tempted to make breakfast at home because I’m starving, but if my showering and dressing process takes too long I just pack something to eat at work. I read blogs while eating breakfast, quickly put on a little makeup and fix my hair. To be honest I’m known to skimp on doing my make-up and hair/ putting extra effort into what I’m wearing in order to make sure I have time to sit down, eat breakfast, and catch up on emails and blog reading. Working in a very casual office makes skimping on these things a bit easier. After brushing my teeth, I make sure Olive has eaten breakfast and then head out the door. Isaac takes Olive outside to potty on gym days because she’s a sleepy head and stays in bed until the last person gets up.

Non gym days: I wake up at 7, do yoga (newest addition!!) or stretch a bit, make sure Isaac gets out of bed, make the bed (I really like the bed to be made!), clean up the kitchen, get dressed (I usually shower at night or only after getting sweaty at the gym so most non-gym mornings don’t include a shower). I like to be making breakfast by 8 so that I have between 8-8:50 to eat breakfast while catching up on emails/blog world, and then do my hair and make-up. We take Olive out when we wake up, if I feel badly for not doing it in a while I do it, but Isaac is usually up for doing it, which I love because it’s so cold out in the morning.

Everyday: I walk to work. It takes about 5-7 minutes, depending on what type of shoes I’m wearing. :)

Weekends are a whole nother story. If I don’t have any big plans I usually sleep in until 8-9AM, eat breakfast, play online (reading blogs or blogging), and then hit up the gym.

So this morning was meant to be a gym morning- but I kept pushing snooze and didn’t get out of bed until 7 so it ended being a yoga at home morning. I did the free 20 minute Yoga for Weight loss video from Yogadownload. It’s a short version of the challenging practice- it starts with fast past flows and finishes with a shoulder stand, fish pose, and eventually ends with savasana. I’m thinking this particular video is worth buying the full 45 or 60 minute version. After doing yoga in the morning for quite I few days I think I’m addicted. It’s just such a nice thing to wake up to.

After yogaing and getting ready I ended up running short on time. I snacked on a sliced banana with better n pb.

And threw a packet of Kashi Truly Vanilla in my bag for breakfast at work.

trulyvanilla.jpeg IMG_3035.JPG

As you probably have noticed, I like Kashi products. Their cereals and crackers are among some of my favorite products. As far as instant oats go, I like the heartiness of this flavor and the actual flax seeds mixed in the oats. It has 150 calories, 2g of fat, 100mg of sodium, 6g of sugar and 7g of fiber. 6g of sugar is low for a flavored instant oatmeal – Quaker’s Maple Brown Sugar has 13g of sugar and Quaker’s Cinnamon and Spice has 15g! Plus, the addition of soy and whey give the Truly Vanilla packet 9 grams of protein! I really enjoy stove top oats but when in a rush, I think Kashi instant oats are a good pick.

What’s your AM routine like? Do you eat breakfast at home, on the run, not at all, or at work?

Edible

October 28, 2009

Last night Isaac and I planned to cook dinner together. I went straight to the gym after work and when I arrived home he had done much of the chopping and had even started the process of cooking a “surprise.” The surprise ended up being roasted butternut squash, unpeeled, cut in quarters, and coated with [...]

Everyone has been missing Olive’s sweet face on the blog- including me so I snapped a new photo yesterday. I was sitting on the couch intently watching Isaac and a friend play the wii and Olive started being a cuddle-bug. I promise this wasn’t posed, this truly is how she lays. ps. I’m not trying [...]

Snacking. Serious Business.

September 26, 2009

It dawned on me last night as I had kale chips dehydrating and a hummus and cracker plate prepped for some guests that I’m a serious snacker. I’ve never been a 3 square meals a day- nothing more, nothing less type of person. Growing up I snacked a lot, which was a contributing factor to [...]
