Happy Shopping Day

Christmas morning I awoke to an excited bed buddy ready to open presents. No, not Olive- Isaac! We turned on the Christmas music, made coffee, breakfast and then OPENED the gifts. It was totally fun and Santa did an excellent job this year.

Cardio Burn Balanceball

I’m more of a gym girl when it comes to working out, but I’m excited to try out some stability ball workouts at home! I’ll be sure let you all know how I like the DVD.

After presents and a bit of packing we headed to the Outer Banks, NC to spend time with Isaac family. We stopped to see his grandparents along the way and arrived to the beach around 4PM. Isaac did the driving so I just sat back, relaxed, and read about a dog mothering a baby pig in Modern Dog. (I’m not kidding.)

To start the evening off on the right foot, I had an Anchor Steam Christmas Ale.

The Ale’s recipe is different every year—as is the tree on the label—but the intent with which we offer it remains the same: joy and celebration of the newness of life. Since ancient times, trees have symbolized the winter solstice when the earth, with its seasons, appears born anew.

I celebrated the newness of life by drinking it while checking my email. :) Twas a malty treat for my Christmas afternoon.

Later in the evening, the dentist by day, chef by night, (that graciously invites me to come with Isaac’s family to the beach) cooked up a superb meal.

Shallow fried local rock fish topped with a lemon beurre blanc sauce

The rock fish was fresh and cooked to pure perfection. As you all probably know, I don’t eat fried food often, but this dish still tasted light because it wasn’t submerged in the oil and didn’t hold the grease.

There was also lemon spinach, a fine cheesy pasta with red pepper flakes, and a cabbage, apple, miso, and walnut salad. The cabbage salad was so good. I was able to get the list of ingredients so I’ll definitely be recreating this simple salad at home in the near future.

I was going to yoga after dinner but my belly was completely stuffed from all the deliciousness. I ended up chatting with my mom and dad on the phone and then making a trip to the hot tub with Isaac and his sister. Almost as a relaxing as yoga, plus I’m pretty certain that Christmas is a good day to take a break. :)

Happy day after Christmas to everyone. Go out and get some good deals! Although I’m not planning to do much shopping today, I am planning to do some decoration shopping when I get back in town next week. I need a tree skirt and a stocking!
