Brown Rice Porridge
Heres a recipe for a different way to spice up your regular oats in the morning – I know they don’t look much different, but they have a different, but delicious texture!
Makes 2 servings:
- 1 cup cooked brown rice (I used cooked rice that was left over from dinner)
- 1 cup water
- 2 T rolled oats (uncooked)
- 1 whole banana (or 1/2 of one)
- Some cinnamon
Heat these ingredients on high until it comes to a boil. Reduce heat to a simmer, cover, and cook for 7-8 minutes. The porridge will thicken up like regular ol’ oats. I sprinkled flax and had a spoonful of pb on top. This makes two servings so I just eyed it and put about half in the fridge for later or tomorrow.

Yummy!! I made this for my toddlers this morning and they were begging for seconds! I made mine with coconut milk and it was so sweet, smooth and delicious!
This sounds great! Gonna give it a try tomorrow!
