Keeps on Getting Better

Evening friends! How’s it going?

My day started out pretty average with a trip to the gym for a quick strength training workout, but turned good when I remembered I had this treat waiting for me in the fridge when I got home.


Okay, let’s be honest I never forgot about the overnight oats. I was pretty much dreaming of them with every deadlift and lunge I completed.

This batch had 1/2 cup oats, 1/2 cup almond milk, 1/4 cup Voskos Honey Vanilla Bean Greek yogurt, 1 T. chia seeds and cinnamon. The honey vanilla bean yogurt totally made the oats. Although I still haven’t tried the plain Voskos – I’m already in love. Both the fig and honey vanilla bean have tasted heavenly.

The oats were lacking in the fruit department so on the side I had a chopped apple.


The AC is broken at my office so by the time lunch rolled around the only thing I was in the mood for was a fresh salad. I topped romaine with grilled tofu and veggies from last night, some baby tomatoes, and an avocado.


And on the side- some left over brown rice in a coffee mug.


Sometimes my bowls are too big so mugs work perfectly. ๐Ÿ™‚

So lunch was dandy. I headed back to work and despite being in my office turned sauna, the day started to get even better! I got a phone call from the coordinator of a contest I entered with news that I’m a finalist!! I’m not sure if I’m allowed to divulge the full scoop right now, but I’ll be sure to let you all know the details as soon as possible. I’m so excited!!

Other lucky things occurred when Isaac and I made it to the Farmer’s Market about 1 minute before our CSA closed up shop early due to an afternoon thunderstorm.


We stocked up on lots of veggies in a furry and then booked it back to the car. Luckily we made it because I had big plans for a cooling cucumber salad and we needed lettuce for it!


Yum! This salad turned out to be perfect after a day in a hot office. The mix of cucumber, citrus and a little saltiness of the dulse was amazing. Both Isaac and I really enjoyed this!

For those of you that may be wondering what in the heck dulse is, it’s a redish purple sea vegetable that is high in iron, protein, fiber, and B vitamins. You can find it at most health foods stores- I got my package at the Whole Foods here in Richmond. I don’t love eating chunks of it plain because it gets slimy in your mouth, but when chopped finely it adds a nice, salty flavor to salads and soups.

Cooling Cucumber Salad

3-4 cucumbers, peeled and deseeded, sliced into thin rounds
1 small red onion, peeled and sliced into thin crescents
1 small head of lettuce, shredded
1/4 cup fresh orange juice
1 tsp. orange zest
1 tbsp. dulse flakes

Mix cucumber, onion and lettuce. Combine orange juice, orange zest and dulse flakes and coat cucumber salad evenly. Let marinate for 10 minutes inside the refrigerator.

Last but not least, the day ended on a positive note when I came home to a fun little package from my friend and fellow blogger, Amie over at The Healthy Apple.

Sometimes we feel like we are doing everything possible to be healthy, but still aren’t seeing the results we want. Amie’s list nails some of the things that might be holding us back.

  8. Is there a sweeter combination of words than “honey vanilla bean greek yogurt”? I don’t think so. In Canada, we only have the plain, so I hold out hope that flavoured greek yogurts eventually make their way north of the border.

    Your CSA bounty makes me wish I joined one too!
