Hey Everyone! I hope you had a lovely weekend. I thoroughly enjoyed mine – although I started to feel as though I was coming down with a sore throat/sinus infection on Saturday. Hopefully my anti-sick regimen of vitamin c, tea, and rest will keep it from coming on full-force. I think I might have to decongest by pulling out the neti pot this morning.
Some of eats from Saturday included a big bowl of TJ’s high fiber cereal with a little raw granola aka granola in a haystack.
Lunch ended up being a plate of different goodies – TLC crackers/1 carrot with hummus, roasted b-nut squash, and a New Morningstar Farms Gillers Chik’n Veggie Patty.
I dipped the b-nut and Chik’n patty in ketchup. I’m not a huge fan of fake chicken products (usually they are breaded) but to my surprise I liked the grilled patty. Although, the ingredient list for these babies quite long- it was flavorful, cooked quickly and only has 80 calories. Thanks to Isaac’s friend for giving me one of his to try out! 🙂
Sunday morning I found out that prune oats aren’t nearly as tasty as banana oats. I still ate the full bowl, however, a little homemade apple butter may or may not have been added to the mix half way through. 😉
We were out and about during the day and got hungry for lunch. I really wanted to do the Whole Food’s bar but I thought Isaac and his Dad might not be up for it so we decided on Moe’s. Once at Moe’s I realized I should have just recommend WF’s because no one was super pumped about their meal. Oh well. ;/
I got the Art Vandalay Streaker-Style burrito sans cheese and sour cream.
I was going to skip the chips, but they’re free so I asked them to give me a few.
It was okay, but nothing spectacular. What more can you expect from fast food?
Right after eating we hit up the gym. I wasn’t really feeling it (I was still sore from my workout on Friday and Saturday) so after walking 20 minutes on the treadmill I grabbed Isaac and we ditched that popsicle stand. Once home I promptly hopped into bed for a little nap – I hadn’t felt 100 percent all weekend and after the gym my throat was hurting quite badly and I was feeling depleted of all energy.
30 minutes of slumber was exactly what I needed. The funny part is that I got up thinking it was time to go to work and was pleasantly surprised it was actually only 4PM. I started prepping an appetizer for a dinner while catching up with a bloggie friend. Love her!
Roasted Garlic Artichoke Spread with Fresh Oregano from E,D&BV served with WW pita bread.
I used a bag of frozen artichoke hearts from TJ’s instead of canned artichokes and it worked perfectly. I’ve always loved roasted garlic and artichoke separately but together they were superb. Everyone at dinner thought it was delicious. Per the usual, Dreena does no wrong.
Once at our dinner hosts’ place I sipped a little Prosecco with the lady of the house while chatting and enjoying the artichoke spread.
For the main meal they served a roasted beet arugula salad
and a morel and mushroom linguine in a decadent cream based sauce. Both the salad and the pasta were fabulous. It was a real treat to be cooked for by a wonderful chef. (This happens to be the same chef we went to the beach with back in December).
After cleaning up a bit, dessert came out of the oven smelling heavenly. Ina Garden’s Pear and Apple Crisp made with locally grown apples was served with Vanilla Bean ice cream.
It was amazing! The recipe made a ton so we ended up taking a bit home with us and I joked about putting it on my oatmeal this morning. 🙂 I had cereal this morning for breakfast but who knows the pear and apple crisp might just make a breakfast appearance tomorrow. 🙂
We came home with our bellies full, watched a little Olympics and then crashed. Now, it’s time to get ready for work! Happy Monday folks.
