Yesterday was quite a relaxing day. I spent a good portion of the morning on the phone catching up with my Dad, which was great because we hadn’t had a chance to chat in way too long.
For breakfast I made a protein pancake. I’ve been stuck on the Tone It Up protein pancake since buying the Tone It Up diet plan a few weeks ago. I’ve never been a huge pancake person but protein pancakes are super easy to make, tasty, filling and apparently addictive…

For today’s version I used fresh figs from Isaac’s parents’ tree and the pancake turned out to be amazing. I think I’ve officially mastered the art of making (and flipping!) the protein pancake.
Protein Pancake with Fresh Figs
Serves 1 / Adapted from the TIU Protein Pancake
Pancake Ingredients:
- 1/4 cup egg whites
- 1 scoop vanilla protein powder (I use brown rice protein powder)
- 2 T unsweetened vanilla almond milk
- 1/2 T chia seeds
- dash of cinnamon
- 2-3 drops of liquid stevia (optional)
- 3 fresh figs, chopped (or other fruit of your choice)
Toppings:
- 1 T peanut or almond butter
- 1 t maple syrup
Preparation:
- In a small bowl mix together the egg whites, protein powder, almond milk, chia seeds, cinnamon and stevia until all the powder is dissolved.
- Stir in the fresh figs.
- Spray a medium sized pan with cooking spray and set heat to medium-low. The lower heat is the key to making sure the pancake doesn’t burn.
- Pour in pancake batter and cook until little bubbles form (about 3 minutes). Carefully flip the pancake over to the other side. (Flipping the pancake is tricky because it’s usually quite large. You might need an extra utensil to help with the flipping.)
- Cook until pancake is done in the middle. It typically takes about about 2-3 minutes.
- Place pancake on a plate, top with nut butter/syrup and enjoy.

After eating I managed to squeeze in a yoga session. This was much needed! Since I started the BFL training plan, my yoga for scoliosis therapy has kind of dropped off. I’ve been doing poses here and there but never allocating enough time to do a full session. :/ It felt good to get back to it.
The rest of my Sunday involved:
- Relaxing by the pool with Stephanie <– Hanging out with her is always a blast and today was no different.
- A trip to Whole Foods and Trader Joe’s for this week’s groceries (My Favs!)
- Jillian Michaels Banish Fat, Boost Metabolism workout on Exercise TV (It totally kicked my butt. I was a sweaty mess by the time the 45 minutes were over!)
- A delicious salmon dinner from Tosca Reno’s Eat-Clean Diet Stripped book <– More on that soon!
Now it’s time for me to meet up with Jess at the gym. This week is the LAST week of the 12 Week BFL challenge. I can’t believe the time went by so quickly…

The TIU recipe was already pretty perfect, I just switched up a few ingredients and perfected the art of flipping a pancake that big!
I love the banish fat boost metabolism workout, I’m also a big fan of her shred it with weights its awesome! I must admit I am not a pancake fan but these sound and look good especially with figs!

Those protein pancakes sound good!! I love that you put PB and maple syrup on because I have been doing that for years and I get the weirdest looks. I tell people to not knock it before they try it – most people end up loving it! How could you not?! I think it’s time to get my protein pancake making pants on this morning!
Topping the pancake with pb and maple syrup is critical to it tasting so darn good. I rarely eat waffles but even growing up I used to put pb and syrup on them. The combo is so good!
That’s my favourite Gillian Michaels DVD! I thought it would get easier after a few tries but I must have done it 20 times now and it’s still kicking my butt!
I am addicted to almond butter and maple syrup on my waffles so now I’m going to have to try it on pancakes! This recipe also goes along with the eating plan I’m doing so I may need to make a trip to the store this week and try these

We have a huge fig tree that’s harvesting right now. Using the figs this way would be delicious!

Protein pancakes have been on my to-make list! With all the protein powder around my boyfriends condo, I might as well try it.

Really? How’s the texture on these? I have made some horrible HORRIBLE protein powder pancakes and pretty much stopped trying. That rubbery meat-ish texture makes me want to throw up. And I tend not to eat it if I have to add fat and sugar to make it taste good (syrup and pb).
I like the texture and I’ve eaten them plain without syrup and pb before.
That pancake looks so good! I have yet to try a great protein pancake, but this one looks promising:-).
