St. Patty’s Sweet Brown Bread

It must be the luck of the Irish, because for the first time this week I made it to the gym IN THE MORNING. Springing forward has definitely wrecked havoc on my usual AM workout routine- I can’t seem to get up before 7 now! And, if it hadn’t been for the fact that I was meeting my friend Jessica at the gym this morning, I’m not sure today would have been much different. Workout buddies are awesome!

Oh and Happy St. Patrick’s Day to you!! Last year I made a loaf of Irish Soda Bread to celebrate St. Patrick’s Day and I decided to continue the tradition. Only this year I went a tiny bit healthier and made a loaf of Sweet Brown Bread. It’s another Irish classic, however it’s made with whole wheat flour. I used a recipe from the Weight Watchers New Complete Cookbook but made a few changes by using non-fat plain Chobani instead of buttermilk, leaving out the 3 T brown sugar and adding in 1/2 cup of raisins.

I’m glad I added the raisins because they totally make the bread!

Sweet Brown Bread

Serves 12 / Print Recipe

Ingredients

  • 1 ¼ c whole wheat flour
  • 1 tsp baking powder
  • 1 tsp orange zest (about 1 orange)
  • ½ tsp baking soda
  • ½ tsp cinnamon
  • Pinch sea salt
  • ½ c non-fat, plain Greek yogurt
  • 1 egg
  • 3 tbsp dark molasses
  • ½ cup raisin

Preparation

  1. Preheat oven to 375°. Spray a 4½ X 8½ loaf pan with non-stick spray.
  2. Whisk together flour, baking powder, zest, baking soda, cinnamon and salt.
  3. In a separate bowl, combine the remaining ingredients.
  4. Add the wet mix to the dry ingredients and blend. Do not over-mix.
  5. Pour into pan and bake 38-40 minutes, or until a toothpick inserted into the center of the bread comes out clean.
  6. Cool 10 minutes then remove from pan and let it cool completely wire rack.

The bread turned out to be a nice, dense and slightly sweet loaf. Perfect for late night snacking breakfast. :)

This morning I knew I wanted to have a slice of the sweet brown bread but I also needed a little something more so I topped it with a little almond butter and paired it with a hard boiled egg and a navel orange. Perfection!

My second choice for St. Patrick’s day breakfast would have been a green smoothie. Maybe I’ll opt to have one of those tonight instead of the green beer that Isaac bought.

This looks so good! I’ve been wanting to try baking using healthier substitutes so this might be a good recipe to ease me into it.

And I felt SO much better after we worked out this morning, I have to remind myself of that feeling when I’m laying in my comfy bed not wanting to move :)

Hi there!

Just want to say that I love this post on St. Patty’s sweet brown bread. I love the fact that you used whole wheat flour! It is so much more healthy and you can make a mean dish out of it! Which you did! This bread looks absolutely yummy! I take my hat off to you…

I love the hard boil egg and naval orange with it! You are right, very good for a late night snacking breakfast!

& I’m right there with you on the time change messing up my sleep; I haven’t been able to get up for the gym AT ALL this week; my alarm starts going off at 4:59 and I haven’t gotten up before 7 all week.

My St. Patty’s day is now over, as it is Friday where I am, but
I just stayed at home and enjoyed some Guinness stew and
potatoes. It was perfect.
