I’m back! I hope you enjoyed my wedding weekend recap – it was definitely a fun post to write.

Even though it’s only Tuesday, I feel like this week has been kind of crazy. After spending all day (9:30AM-11:30PM) Sunday in a plane or at an airport there was a lot of catching up to do yesterday and today. I still don’t feel as if I’m back on schedule yet….

Anyhow, overnight oats completely hit the spot this morning! I’d been missing em’,

I went to PT before work (my leg seems to be getting better, but it’s still tingly) so I just toted this container with me. I love have portable overnight oats are!

Lunch was simple since we didn’t have a ton of groceries on hand.

Hummus wrap with veggies, steamed broccoli and a few seaweed and sesame rice cracker chips. <– they’re hiding out behind the broccoli back there.

I really wanted to get in a little activity today because I haven’t worked out in a few days, but I ended up going to the farmer’s market right after work. We’re still trying to use up all our $ before the season is over so I stocked up and then came home to make dinner!

In other fun news, I was chosen as a FOOD & WINE Blogger Correspondent. I am super excited about this opportunity because I’ve always been a little intimiated by the recipes in high caliber cooking magazines. I think it will inspire me to try a few recipes that are more challenging and perhaps cook some foods unfamiliar to me! With that said, I took it upon myself to peruse the FOOD & WINE website this evening and decided to try out a recipe I found under the fast and healthy search options:  Bacon Quinoa with Almonds and Herbs

I know what you’re thinking. Brittany’s eating BACON?!?

Hooray!!!!! (at least, that’s what Isaac would be thinking). Well yes, and no. I used fakin’ bacon. :)

I actually changed the recipe quite a bit by using onions, tempeh bacon, broccoli, parsley and leaving out the almonds. I also served my quinoa with steamed sweet potato chunks! Twas’ fab!

I’m really loving the whole “cooking quinoa with lots of things in one pot” idea. The other night I did the same thing with mushrooms, onion and bok choy and it turned out delicious! Quinoa soaks up the flavors from the vegetables and comes out tasting more delicious than ever!

I’m off to take Ms. Olive on a walk and enjoy the nice weather out tonight. I hope you have a lovely evening as well. Get excited- Modern Family comes back on tomorrow!! Oh yea!

I adore having overnight oats in the morning. I need to make some again this week.

Great recipe! Haha, I’ve never had fakin’ bacon. I actually hate the real thing so I don’t think I would ever be interested in venturing into the fake stuff.

Love Food and Wine recipes! I go to their website for inspiration quite often – was actually on there today believe it or not! Glad you had a nice night relaxing and getting back into the swing of things last night girl :) We need to catch up sooner rather than later though, maybe a lunch or something?!

I can’t wait for Modern Family! I wish we could watch it together…your quinoa pilaf looks just delicious. How do you make so many great meals for yourself? I admire your creativity so much! All my energy goes into baking…so dinner gets a bit boring around here!

Congrats, lady! That’s amazing! And the recipe you created looks absolutely delicious. I need to start cooking more quinoa!

I’ve heard such good things about Modern Family. I wonder if I could tune in and not feel like I have no idea what’s going on??

That sounds yummy! I am totally into the cooking a grain in a pot with a bunch of stuff for flavor…my newest favorite dinner (perfect for a poor college student) is grits cooked in veggie stock with a bunch of frozen or sauteed veggies mixed in while cooking, and then in the last couple of minutes crack an egg right into the middle and it kind of cooks/poaches in the grits and you break it up so the yolk makes it all creamy! I also did grits seasoned with coconut milk, soysauce, lime juice and cilantro to do kind of a thai flavor. I have decided that grits are like the healthy person’s ramen…the quick kind cook in 5 minutes, much more filling and less fatty than ramen, and you can season it with anything you want!

Congrats on the Food & Wine gig…I will have to check them out online (and tell them it’s all thanks to you!)

Oh yeah, I also totally made your apple butter last night and had a pb&ab sandwich for lunch…super yum! I sense more of this being made as gifts this Christmas!
