Champion Raisin-Almond Chex Bars (Giveaway)

This past weekend Isaac’s (Summer League) Ultimate Frisbee team was in the playoffs and ended up winning the championship!

Obviously, there was a need to celebrate!

Typically ultimate players drink beer out of frisbees, but since they had a trophy at the end of this game, trophy beer was passed around and sipped by all.

I like to think the Raisin-Almond Chex bars I brought to share helped the team win!

As part of MyBlogSpark I was given the opportunity to try out one of five Chex® cereals that are now gluten free: Rice, Corn, Honey Nut, Chocolate, or Cinnamon.

I’ve always been a fan of homemade chex mixes, particularly one my family calls Trash aka Muddy Buddies so I think it’s pretty cool that now folks with gluten allergies can enjoy Chex cereal without any worries.

I have to admit that although most Chex based treats are absolutely delish, they’re also quite addictive (at least to me). That being said I put my complimentary box of gluten free Corn Chex to good use by making a version of the Apple-Almond Chex Bar for Isaac to share with his frisbee team.

Raisin-Almond Chex Bar (gluten free)

  • 4 cups Corn Chex® cereal (Cinnamon Chex would work great as well)
  • 1/2 cup sliced almonds
  • 1/2 cup raisins
  • 1/2 cup coconut flakes
  • 1 1/2 T coconut oil
  • 3/4 cup light corn syrup (I used Wholesome Sweeteners)
  • 1/2 cup packed brown sugar

Directions:

1. Line bottom and sides of 8-inch square pan with foil. Spray foil with cooking spray. In large bowl, mix cereal, coconut, almonds and raisins; set aside.

2. In 1-quart saucepan, heat oil, corn syrup and brown sugar over medium-high heat, stirring constantly, until sugar is dissolved and mixture comes to a boil. Boil 2 minutes, stirring constantly, until slightly thickened.

3. Pour over cereal mixture in bowl; stir until evenly coated. Using buttered back of spoon, press mixture firmly in pan. Refrigerate 1 hour or until firm enough to cut.

4. For bars, cut into 4 rows by 4 rows. Store covered at room temperature up to 1 week.

Like most Chex recipes, the bars were super easy to toss together and everyone loved them – even coconut haters. :)

I like rice Chex though it’s a cereal I haven’t had in a while! I’ll have to remember it next time I’m at the grocery store.

I love Chex because the milk soaks through the little holes but the cereal still stays crunchy! My favorite flavor is Honey Nut but I’m dying to try the Cinnamon.

I LOVE muddy buddies! I went to school in Wisconsin, and they called it Puppy Chow. They even sold homemade batches of it in the grocery stores there!

Back in the day, Chex Mix Bold Party Mix was purchased from the vending machine in high school almost daily… unfortunately those days of unstoppable metabolism are gone :(

The chex bars look great! My favorite way to eat chex cereal is using the tradtional mix made with worcestershire sauce and garlic/onion seasoning. Love savory snacks.
