Speaking of welcoming. I wanted to give a shout out to all of my new readers – even if you don’t comment I know you’re out there. I hope you are enjoying this little piece of the blogosphere. I want to be a helpful, inspiring, and fun blog to read so please let me know if there is anything you to see on here as I’m always up for suggestions.
Now, back to those peaches. They’ve been ruling my meals lately. Partly due to the fact that their delicious and also because I’m doing my best to incorporate them into my everyday meals and snacks rather than making a big dessert. It would be fine if I had a party/function to take peach pie/cobbler/crumble to but with only 2 people in the house having a 9×11 pan of peach cobbler sitting on the counter would be much too tempting. And as my luck would have it, I’d be the one to eat most of it. I digress.
I had a peachy breakfast waiting for me in the fridge after going to the gym. Woo-hoo for getting to workout after a 3 day break. I took it easy and did the elliptical and some abs. My back didn’t hurt but my leg is still doing the tingling thing. Not as bad as it was before, but it’s definitely still there. :/

Peach Overnight Oats
- 1/2 cup oatmeal (old fashioned)
- 1 cup almond milk (unsweetened vanilla)
- 1 T chia seeds
- 1 peach, chopped and mashed
- Dash of cinnamon
Combine all ingredients in a bowl, mix well, cover, and let sit in the fridge overnight. That’s it! Wake up, top the mixture with you favorite toppings and enjoy.
After work I tried my hand at some peach salsa per the recommendation of Natalie over at The Sweet’s Life. I didn’t have red onion, jalapeño or cilantro so I rolled with what I did have.
2 tomatoes3 white peacheshandful of basil1/2 medium white onion1 chile pepper
I thought throwing all the ingredients into the vitamix was the perfect idea.

Sounds good right?

I’m not sure what I did wrong – maybe putting the peaches on the bottom? But, let just say I ended up with peach salsa soup instead of salsa. Delicious peach salad soup nonetheless, but still way too soupy. (I guess that’s what I get for having a super powered blender.)

Being bummed with the result and having more peaches at my disposal, I decided I would make another “chunkier” batch with hand chopped tomatoes and peaches.

This one ended up being too chunky for my tastes! So I did what seemed logical and mixed the two batches of salsas together- problem solved.
So the consistency of the salsas gave me a run for my money, but the flavor was ah-ma-zing!! I loved the sweet and spicy flavor combination.. maybe a little too much considering I ate my fair share of chips while “testing out” the salsa.
I’m actually sipping another peach smoothie (same recipe as Monday) this morning as I type. You may find it hard to believe but we only have about 5 peaches left. Between smoothies, oatmeal, snacks, and salsa the peaches were consumed rather easily. We did give a couple away, but only about 7 or so. My CSA already sent out another email about ordering more.. I’m tempted, but we shall see.

Mmmmm love peaches, but I’m so used to using bananas in my oats base… How do you like marinating peaches as opposed to bananas in your VOO? Do the peaches lose their flavor as they soak in the almond milk?
To be honest the sweetness of the peach didn’t shine through as well as the sweetness of a banana, but it was still tasty.
Hi Brittany….I’m just wondering how much all those peaches cost you? I have been buying them at my local farmer’s market but have only been able to afford a few a week as the organic ones are quite expensive.

I have the same problem with my blender too: when I am trying to make something “chunky” it turns out smooth and when I want it smooth it turns out chunky! I finally got a Magic Bullet to help with the chopping and it has been working out great so far.

Although the salsa consistency wasn’t what you had hoped (darn that insane power of the Vita-Mix) the ingredients sound delicious! I need to pick up some peaches soon!
I always make my salsas in the food processor so I can see where the vitamix would have chopped everything a bit too quickly, especially if the fruit was ripe. Sounds yummy thought.
I think mixing the 2 salsas was ingenious! I hate when my food processor goes a little crazy and I overchop something. It still looked yummy though

Working through peaches myself – hadn’t thought of peach salsa, but maybe I”ll give that whirl. So far there’s been peach galette for our current couchsurfing hosts, almond and date stuffed peaches, peach oatmeal, peach margaritas…only 4 pounds to go! Can’t really complain, though.

I enjoy reading your blog. Its been a few months, and can’t even remember how I came across it! I hope your back starts to feel better. Best to have it looked at by a physical therapist if it doesn’t get better, and be cautious with your ab moves, they shouldn’t increase tingling!

I so love fresh summer fruit, but hate how quickly it goes bad! I love all the ways you’ve come up with to use peaches, rather than resort to a stand-by cobbler!

I did the same thing with blackberries- instead of making a cobbler, I found a salad dressing recipe and it was awesome =)
