Hi friends. I hope your week is off to a good start!
As for me, I had my first physical therapy appointment this morning and things are looking up of the tingling leg front. Apparently the muscles on the left side of my back are overcompensating for the misalignment I have from scoliosis. The lower back muscles on my left side have become very short and knotted up and are pulling down on my left shoulder and up on my left leg. This in turn is affecting the muscles in my left leg (causing tightness) and also causing a pinched nerve in the pelvic area which leads to the main symptom I have been experiencing, the leg tingling and numbness.
I LOVED my physical therapist! She did a complete evaluation of my whole body- not just the areas I expressed that I was having pain in. In addition, she was very informative, answered all my questions and did a lot of hands-on work rather than machine exercises. And, for the first time in about 3 years (crazy that I it’s been that long since I graduated from college!) I have homework to do. The homework is 4 different exercises – all are pretty easy and one requires me to lie on the ground with one leg at a 90° angle so the other can completely relax for about 30 minutes. Sounds like a great exercise to me. I think I’ll use that time wisely and read Eat, Pray, Love since I’m trying to finish it before the movie comes out in a few weeks.
As for my eats, I’ve been trying to stick to eating clean, it’s basically a must now that my bridesmaid’s dress (for the wedding in September) is a bit snugger in the middle than I remembered it being back in the spring….
So lots of protein filled salads have been appearing for both lunch and dinner:

I’ve founds that frozen edamame is an easy way to add a little protein to a salad. The frozen bags of it cook super quickly and it cools off fast, making it perfect as a salad topper.

This one was topped with hummus, sliced tofukery, and crazy patterned green/yellow heirloom tomatoes.
On the side I had some left over baked beans and tortilla chips.

It might sound strange, but using tortilla chips to scoop cold (or hot) baked beans is really tasty. I love the sweet and salty flavor. Try it!!
I’ve also been sipping on this homemade kombucha! A family friend of Isaac’s brought me this little jar and was so excited to try it. Since GT’s was pulled from the shelves I’ve been missing it. (Alas, my bank account has been thanking me.)

I’ve never had homemade kombucha and was expecting it to taste different than the store bought versions but as it turns out, it was amazingly similar to GT’s Original. I’m almost tempted to ask her to teach me how to make it myself.
Mid-afternoon today I snacked on a another fun surprise I found at Whole Foods over the weekend, the new Carrot Cake Larabar!

1 word = amazing! I really like carrot cake and was pumped to give it a try. Let’s just say the bits carrot, almonds, dates and spices did not disappoint. It’s definitely up there as one of my favorite Larabars, probably coming in right after my most favorite, Coconut Cream Pie! Now I’m anxious to try the other newly released flavors: peanut butter chocolate chip, chocolate chip brownie, and chocolate chip cookie dough!
I’m now off to the gym, don’t worry my PT said I was allowed to exercise.

PS – The best part about today is that I was suppose to be moving offices so I wore “moving clothes” aka yoga pants, a thriv shirt, and sneakers. Turns out we are going to move on Wednesday instead, which means I get to wear moving clothes again on Wednesday – SCORE! If only I could wear yoga clothes everyday…

Cool, glad you like the therapist, and (even though I’m not a fan of baked beans) great meal!
Glad your therapy went well! I have yet to find the carrot cake bar, but I love the cookie dough one!
Glad to hear the appointment went well! I always look forward to field days with the kiddos because that = yoga pants in my book! One of the things I miss about university was having the option of rolling out of bed and heading off to class in my stretchy pants! Granted, I didn’t do it often, but just knowing I had the option was nice
Haha oh my gosh girl, you have to check out my post tonight. I just posted on how to make homemade kombucha!!! My MIL just gave me the fungus and I’ve been fermenting it for a few weeks. It was finally ready and I just made a batch last night.
Glad your appointment went well! Always so nice to find a good doctor these days.
Mmm love the chip and bean combo! I still haven’t tried any of the 4 new LaraBar flavors
Tempted to order some right off the site. Boxes and boxes of bars… crazy, I know…
Glad your PT appointment went so well- that’s awesome!! Hey, I’d love an exercise like that!
I used to love field days so I could wear yoga pants to work!
where’d you find the carrot cake larabars?!?! ummm i am obsessed with carrot cake and may or may not have eaten 14 slices during beach vacation haha
also have been into the edamame thing lately – their great for adding protein to pasta salads too!
glad you found such a great doc too and hope your leg is feeling better soon
so happy to hear ur PT session was good!!!
mm and the larabars and delicious beans helped too im guessing?
xoxo <3
So glad your PT appt went well and that you like the therapist! My chiropractor gives me homework too!
Frozen edamame is a good idea, I will have to try that in salads! I am so jealous that you found the new larabars! I can’t wait to find them. I’m thinking of just buying a case of each online since I know I’ll love them!
oh how i would love to get my hands on one of those laura bars!! they sound amazing!! i love carrot cake! i hope your physical therapy continues to go well.
I live in Austin, TX and cannot find the new Larabar flavors anywhere! I’m so sad! I realllllllly want to try the carrot cake one too! Glad to know it’s great
love your blog!
This might be a silly question… I was interested in buying some of those lara bars but I noticed they have quite a bit of sugar in them. Are they something that would hinder weight loss for someone that is trying to drop a few? Or are they better suited for someone that is already quite thin? Thanks for your help!
Hey Danielle,
Larabars do have a lot of sugar, however it’s all from natural sources (mainly dried fruit). It’s definitely better for you than a processed sugary snack, however, I still recommend eating them in moderation as you would anything else with a lot of sugar. Sometimes I spilt them in half and eat only one portion for my snack – this cuts down on the calories and sugar.
woah this is the second homemade kombucha post in a row i’ve read today!!!
haven’t had any of the new larabar flavors yet, but have heard such great things; especially about the carrot cake…
I have been missing my Kombuchu too! I’m so glad you connected with your new therapist…and I’m also glad you loved the Carrot Cake Larabar ( I need to get my hands on one ASAP). I have been loving edamame this summer. It is such a great source of fiber and protein.
Glad you got the “go ahead” on exercise. Better safe than sorry.
On my priority list for when I get home is to track down these new Larabar flavors/recreate them myself.
P.S. Kombuchu is so cheap in Austria! I was in loveeeee.
Tell the folks in Austria to send some cheap Kombucha our way.
I don’t doubt the chips and beans thing. One thing bean that I really love, but many people think is too strange to try, is roasting some carrots and brussels sprouts and adding those to a bowl of baked beans. So good!
That sounds a little odd, but honestly, I think I would really like it.
I do wear yoga clothes almost everyday
great thing about working from home, haha. So glad you enjoyed the homemade kombucha!!! You know we make our own and drink it everyday and love it! If you have any questions please let us know. HUGS
I’m jealous!!
I love your blog and have been following for a few weeks now. Your story of weightloss and healthful eating is very inspirational. I would love to know what kind of workouts you do. Maybe you could post a sample workout schedule sometime?
I love your salad…it’s so colorful! I am addicted to big, bountiful, colorful salads
mmm – edamame is such a great salad topper!
I want to make my own kombucha sooo bad! Please share if you do it!
