Two Quick and Healthy Breakfasts

I didn’t have much of a weekend because it was spent packing and carrying heavy boxes and now that the work week has started I’m simply exhausted! And to top it all off the whole moving thing has left little time to workout, cook, or blog! It’s a sad story.

Anyhow, just because I have no time doesn’t mean I don’t eat – especially the most important (and my favorite) meal of the day, BREAKFAST. Hot oatmeal hasn’t really been appealing so I’ve been switching back and forth between some of my favorites including:

1. Sweet + Savory Egg and (Veggie) Sausage Muffin

Sweet + Savory Egg and (Veggie) Sausage Muffin

A toasted Ezekiel English muffin with a strawberry jam spread, 1 egg white, and 1 morning star veggie sausage. I love this combination of flavors and it’s super easy to throw together. Plus it’s portable – unless your like me and like to have the egg side open faced and eat the other side with a different topping like almond butter. :)

Tip: To cook an egg white quickly simply spray a microwave safe bowl with a little cooking (oil) spray, separate the yolk from the white and pour the white into the bowl. Cover the bowl with a paper towel and put it in the microwave for 30-45 seconds or until the egg is no longer runny. It comes right out of the bowl and it has a round shape perfect for putting on English muffins.

2. Best Overnight Oats Yet

Overnight Oats

Creamy Banana Overnight Oats

  • 1/2 cup oatmeal (old fashioned oats)
  • 1/2 smashed banana
  • 1/2-3/4 cup unsweetened vanilla almond milk
  • 2 tablespoons honey Greek yogurt
  • 1 tablespoon chia seeds (optional)
  • 1/2 tsp cinnamon

Put the above ingredients into a tupperware container, mix them all together and put the container in the fridge overnight. Once morning rolls around take the container out of the fridge, give the oats a stir and enjoy!

This is definitely one of the best overnight oat combos I’ve had- and as you know I’ve tried many! I think the banana and yogurt make the mixture extra creamy and perfectly sweet. It’s delicious. If you’ve been waiting to try overnight oats – I suggest the above combination as your experience. :)

Time for bed so I can wake up and eat one of these for breakfast. Which will it be??

Yeah for vegetarian Egg McMuffins! I love making these (although I wish the sodium wasn’t as high in the veggie patties I buy). Yours looks yummy and a great way to start the morning.

I always am thinking of quick and easy breakfasts! Those 2 look so good, love the overnight oat recipe! I have not made overnight oaties in a while but that one sounds amazing, certainly will be making it :)

I always love to combine a sweet and savor breakfast. Bagels and EM’s are perfect for this because you have double the options! :)

Moving is always exhausting! I hope you get some good down time this week. Yummy breakfasts. I love your mix for the overnight oats. I like to go heavier on the milk or milk sub (hooray for almond milk) and lighter on the yogurt.

I tried VOO this past weekend and they were an Epic Fail :-( I am pretty sure the problem was not enough liquid, so I’ll try again before the end fo the week. I like your honey flavor idea.

Headed to get my notepad RIGHT now and jotting down these two breakfast ideas!
Will need to figure the WW points for each!
I think the overnight oatmeal is JUST what the hub needs to eat on the ferry every morning heading to Seattle.
And he LOVES banana!
Got get the chia seeds!
These must be filled with protein!

where do you buy the ezekiel english muffins in richmond? i lam addicted to english muffins, but would love a healthier (more whole-grain) alternative to the ones i’ve been buying at kroger (thomas’). :)

I found them at Whole Foods. But I’ve seen them at Ellwoods and Goodfoods Grocery as well. Hope you are able to find them!
