Heya Friends. Thanks so much for all the summer cookout dish recommendations. It seems like black bean salads are a huge hit among everyone! I’ll be sure to post what I ended up taking to each cookout, along with how well the dishes went over.
Throughout the end of the week and the start of the weekend I’ve been munching on lots of eats that scream summer. Examples include:
Big salads with lots of fun toppings.
a. Roasted veggie cobb salad

I was working from home and had a little extra time to make a tasty (almost completely local) salad. CSA romaine with local tofu, hard boiled egg white from a family at Isaac’s school, avocado, orange bell pepper, and the center piece, sauteed CSA squash and zucchini with an onion.
b. Left over cooling cucumber salad paired with an avocado and a piece of Pure2Raw Lavash Bread.

On the go treats, like this Lemon Poppyseed Lighter Living probiotic bar that Amie sent me.

I’m not really drawn to lemon flavored things but this bar was really tasty. The texture was similar to a larabar and I really liked the sweet icing drizzled on top. The nutritional facts aren’t to shabby either:

Twin Cakes Mint Chip Kremes made my the Pure2Raw twins.

OMG- these are amazing! Growing up mint chocolate chip was always my favorite ice cream so these little coconut treats brought back memories of my childhood. Now I remember why I loved the combination so much.
Cool breakfasts.
a. Overnight oats, which have become my warm weather breakfast of choice. It’s portable, super easy to prep, and doesn’t require lots of dishes.

This version was the same was my cool, creamy overnight oats from a few days ago. The best part is that it keeps me just as full as a bowl of hot oatmeal would.
b. Smoothies

This one was my take on a mocha frappucino with cold coffee, cacao powder, cacao nibs, frozen banana, ice, and almond milk. In theory this should have been an awesome pick me up at 3pm in the afternoon, only it turned out to be a little too thin for my liking. The flavor was there, but not the consistency – needless to say I’ll have to perfect the recipe before posting it.
In other news, we started the weekend off right with another summer staple – a cookout! My company just released a new version of our software. A new release takes a lot of effort from everyone so of course, a party was necessary to celebrate.
Drinks were flowing.

No fruit punch for me, I went for the Naked Organic Riesling.
And to eat, I had a chick’n patty and one side of the bun, lots of grilled veggies, and my first ear of corn on the cob this summer!! I love corn on the cob and last night’s piece was sweet and super delicious.

And if apple doesn’t scream summer doesn’t scream summer, then I don’t know what does.

I had a small slice along with some fruit salad.
This was the first of 3 summer cookouts I’m attending this weekend! Isn’t that what the summer is for – swimming and barbecuing!?!

That salad with mostly local ingredients seems like the perfect warm month fuel to me lady! Sounds like you will be having a fun weekend!
Gah you’re right. This post totally screams summer! The only thing missing is PEACHES!! I cannot wait till those are in season

Today’s been the first day we’ve seen sun in over a week!
You should try putting some xantan and guar gum into that coffee smoothie- they’ll help thicken it up a little bit!

Loving all your summer eats! I love me some good corn on the cob!
Everything looks so fresh! I’m loving the overnight oats as well. So good for warm weather because warm oatmeal really gets me sweating. Not good first thing in the morning! Summer cookouts are so much fun. Everyone is just in a good mood and grilled food is sooo yummy!
You should add more ice to your smoothie! It definitely helps thicken it up.

i love steel cut oats in the winter, but have switched over to cereal since the warmer weather. but these overnight oats are perfect for the hot mornings we’ve been having lately, how refreshing. thanks!!
