Fact Vs. Fiction: I Can Make Green Beans Taste Like French Fries

Fact: I finally made a proper visit to Urban Farmhouse.

This time for lunch with a special lady, Rebekah of Clarity in Creation. We forgot to get a pict together but know that we had a grand time chatting and enjoying the delicious food. For me, the twosome – a hummus sandwich and a tofu miso salad.

Of course the salad was lovely – especially with Twin Oaks tofu, an EBF favorite. But, what surprised me was how much I liked the sandwich bread. Apparently it’s baked locally at the Flour Garden, a bakery that sources a few local restaurants. I haven’t seen it at the grocery store so I’m wondering where I can get my hands on a loaf- any local RVA folks know?

Fact: Leftover vegan/gluten free black bean and sweet potato burgers are just as good the second time around, particularly when served with another helping of sweet taters a.k.a. crispy sweet potato fries.

Fiction: Full fat yogurt is bad for you.

Actually, it’s quite the opposite. This cup of Original Voskos topped with blackberries and high fiber cereal was creamy, needed no added sweetener and kept me feeling full all morning! Say it with me now… fat isn’t bad!!

Fact: Sometimes blog theme updates are best left undone. Unless, of course, you want to spend your whole lunch break on the phone fixing it. PS – The lifesaver that helped me get the blog back up and running was Zesty over at ZestyCook, who by the way, has a great post on juicing that you might want to check out!

While fixing up the blog I had just a few minutes to whip up a quick lunch.

Basically I threw a bunch of stuff into a wrap and called it a day. If my memory serves me right there was zucchini, tomatoes, tofu, onions, and a squirt of honey mustard involved. Luckily this turned out to be quite the combination and tasted amazing. A part of which goes to the Low Carb Tumaro wrap that I used. I’ve tried the Tumaro’s Soy-Full Heart wraps before when Isaac picked them up as a treat for me so I was excited to try the low carb multigrain variety that the company graciously sent me to review.

I really liked the soft texture and heartiness of the these wraps- they don’t break when you are trying to stuff lots of ingredients inside. I enjoyed the multi-grain flavor as well. As it turns out they have several different flavors in the low-carb variety (Garden Vegetable, Green Onion, Salsa). The salsa flavor sounds perfect for fajitas! As far as nutrition facts go, a 10 inch wrap has only 90 calories, 0 grams sugar, 8 grams of protein, and 11 grams of fiber!! Not too shabby. Overall, I’d definitely pick these up at the grocery store with my own $ (and have before). Thanks again to Tumaro for letting me test these out!

Fiction- Noodles can only be made from grains.

Zucchini pasta is right up my alley during the summer. It’s light and refreshing and tastes so delicious. I simply julienned (aka cut into matchstick sized pieces) 1 whole zucchini and topped it with some pasta sauce. Super easy, super tasty!

And for the grand finale:

Fiction- Fries must be made of potatoes.

Obviously, this one is false, considering I’ve made butternut squash fries, parsnip fries, carrot fries, etc… but for the first time I made green bean fries last night.

Green Bean Fries

I washed fresh green beans from Isaac’s parents garden, snapped off the ends, tossed them in a little olive oil (just enough to coat), sprinkled them with sea salt and roasted them in the oven on 425° for about 20 minutes. I probably should have only done 15 minutes as this batch got a little brown, however the flavor was so much like french fries it was frightening, but I loved it just the same! Crispy, soft in some bites, salty, and… plain delicious. Yea, I’m pretty sure these are a going to be a summer staple!!

Okay, I’m to get out out of my work clothes and relax. Hooray for tomorrow being Wednesday already!

Love this post! Seriously, your leftovers and thrown-together wraps look gourmet. Spaghetti squash and carrot/green bean/random veggie fries are my favorite healthy swaps but I need to try zucchini pasta ASAP.

You always have the cutest, creative posts. I so enjoyed reading about your day and your various food adventures. I love using vegetables in place of wheat noodles…spaghetti squash is my favorite (I think because it already resembles noodles) but I imagine zucchini would be just as good!

Green bean fries? Wow, now I am actually intrigued! I thought my parsnip fry obsession was a bit unusual. Well, I guess I’ve seen fried green beans on menus before so I can only imagine these are a healthier version.

I love Urban Farmhouse, so glad you liked it!!! I’ve tried roasting the green beans before too but I didn’t really like them :( Can’t wait to see you for the cake pop trade off!

This is THE best idea for fries I’ve seen. I recently tried green bean “chips” from TJs- I loved the concept but not the actual product. I think fries sound GOOD!! :)

Yum. Green bean fries definitely sound yummy, although I admit my take would probably be something much less healthy, like with a tempura batter. I really need to use my spiralizer more to make vegetable noodles. I confess I got really excited about it and then only used it once. Bad me.

Fact: this post made me miss you and Richmond!

I am sooo glad that you gave the Urban Farmhouse another visit :D Do you know if they started serving wine yet? I remember talking to the owner when they first opened up and she shared all of her wonderful ideas with me and my dad. Moreover, I’m sooo glad that you enjoyed it! The bread is so delicious! I love that you can buy it to take home and enjoy as well. Not to mention all of the other great things you can purchase there–it almost feels like you’re raiding someone’s pantry the way it’s set up lol.

Those green bean fries look so funky and cool! I want to try them :D Crunch crunch!

I am sad to be going out of town this weekend as I canNOT wait to try the green bean ‘fries’- I love green beans! Also, I missed the previous post about saving money and I wanted to say thank you for the coupon websites! The rest of the tips were great as well.

Great Post, Britt! I love the green beans..yummyy; I may have to try those this weekend, thanks! Love your bean burger, too…I agree, leftover burgers always taste better, hehe…I enjoyed reading your fact/fictions as I agree with all of your points especially the ‘good’ fats are good for us point as it’s so important to get good fats and I’m so glad you posted this!

Just wanted to let you know that even someone who’s a picky eater and not too found of veggies (ME!!) Loved this recipe. The skinnier the bean, the more like fries taste you get. AMAZING!!

What the calorie count on the green bean fries in the recipe? I made another batch for dinner tonight. Cooked ‘em a little long but the browner they are the better they taste! I made them in the skillet instead of in the oven.

Hi Lisa, glad to hear you like them!! if you used 2 cups of fresh green beans and 1/2 T of olive oil the nutrition facts would be:

Cals 127, Fat 7 g, Cholesterol 0 mg, Sodium 0 mg, Carbs 13 g, Fiber 8 g, Protein 3 g, Sugars 5 g
