Apple Pie a la Moo-gurt

by Eating Bird Food on May 13, 2010

Hey yall. How’s it hanging?

All is well in this neck of the woods. Isaac and I went for a little run post work. The weather was super cool and nice out – perfect for an evening trot. After running about 2 miles we stopped by my fav - Ellwoods for a few dinner ingredients. The Farm to Fam bus was hanging out in the parking lot, per the norm for a Thursday evening so we decided to check it out. I’d been on board the bus once before but didn’t have any cash money to buy anything.

Luckily, we had thought ahead and brought some funds on our run. The bus was chocked full of local foods including fruits, veggies, meats, and dairy products - I got super pumped to see the fresh dairy products they offered.

Totally enticed by the Moo-gurt (aka plain yogurt), I grabbed a container and started dreaming of what to have for an after dinner snack. We also picked up some milk, raw cheese, and apples.

After dinner I put the dream into reality and made a delicious, yet healthy little treat.

Apple Pie a la Moo-gurt

Ingredients:

  • 1/2-1 cup plain yogurt
  • 1/4 cup granola (I used Vanilla Almond)
  • 1/2 fuji apple, chopped into small chunks
  • 1/2 tsp. cinnamon
  • 1/2 tsp. vanilla

Prep:

Put the apple chunks into a microwave safe bowl and stir in the cinnamon and vanilla. Pop the bowl into the microwave for 30-45 seconds (just until the apples are soft and fragrant). In a separate bowl layer the yogurt, granola and apples, stir to combine. Enjoy immediately.

Holy yum! This combo totally reminded me of apple pie. The microwaved apple pieces were warm and sweet. (Definitely need to try this combo again on oats.) And, the yogurt totally stole the show. It’s thick and not very tart, which a flavor unlike any store bought yogurt I’ve tried. At this rate I think Isaac and I are going to need to buy stock in Mountain View or just sign up for the Milkman Home Delivery. Having fresh from the farm milk, yogurt, and raw cheeses delivered to our door on Thursday mornings does sound awfully nice. :)

Happy Friday folks. I’ve got a busy weekend planned including dance recitals, a CSA pick up, yoga, a 10K race, and maybe even a bloggie sleepover!?! Do you have any big plans?

What a fun idea to have the portable fresh produce and goods bus outside? I’ve never seen that before, but I’d be all over it if I found one. Glad that you had a great night! Take care!

Yum. I’ve definitely made some variation of this before– warmed apples with lots of cinnamon are one of my absolute favorites, anytime. You should try adding fresh nut butter to this recipe sometime! I think….no wait, KNOW that you’d love it :)

My weekend plans = vegging out! I’m on the honeymoon phase of summer after all….so its kind of impossible not to be a little lazy the first few days!

I love this snack! Here is another little tip that makes this even better. Mix the apple chunks with some applesauce and cinnamon and heat them for about 45 secs in the microwave. It really tastes like a hot apple crisp! Amazing!

Happy Friday dear.

Several days ago I just discovered the the versatility and deliciousness of a little chopped nuked apple with cinnamon sprinkled on it.
I put it into my gluten free vegan pancake mix…..and then some on top of the pancake. Wow-no other topping needed.

ooh, they do home delivery? How fun!

The local milk/butter we’ve been getting is a few hours away and I don’t think they do home delivery, but I would TOTALLY sign up for that. I just love the glass bottles. And everything tastes SO much better than other storebought ones.

No big plans for the weekend except to finalize my CSA. This will be my first year doing one, so I’m excited to see what they send me!

I had cinnamon ‘baked’ apples today too! I didn’t put any vanilla in mine though, but I’ll try it next time! Good luck in your race! :)

I’m really impressed by your commitment to local foods and agriculture. The terms have become almost-jargon like in their over-use (and not necessarily corresponding manifestation into most people’s lifestyles), so way to rock the CSA and dairy delivery. To bastardize the line from It’s a Wonderful Life: Every time a CSA box is delivered, an angel gets its wings. Or a small farmer smiles. Or a really cute kitten is born. Take your pick :)
