Spin Class Fail

We went to bed early last night figuring with 8 hours of sleep we’d be ready and raring to go to the 6AM spin class this morning. I even woke up at 5:15 and got out of bed, but much to Isaac’s dismay delight my legs were feeling way too sore for such a intense workout. Note to self: do not do boot camp the night before a 6AM spin class.

It was more of a core strengthening/ yoga stretching kind of morning. Followed by this gem:

I knew I would be helping a co-worker prepare for a Baby Shower during lunch so I packed a frozen meal to eat at my desk. (-1 for the March Madness Challenge)

The ingredient list is short, it only has 260 calories, and the veggies are quite tasty. However, vegetable lasagna is something you could easily make at home and freeze for a fraction of the cost.

Overall this meal is pretty tasty for a frozen dish, but I still like the Mayan Harvest Bake more.

Isaac and I made it to the gym after work. I wasn’t trying to do anything crazy so I walked on the treadmill and did a little stair climbing while reading The Help. The time went by so quickly. Good books tend to do this to me. I think I read 4 out of 7 Harry Potter books on the treadmill or the elliptical.

We came home. Isaac had pizza and I whipped up a quick dinner – an omelet.

Although, it wasn’t just any omelet. This guy had 2 local eggs (given to us from one of Isaac’s students), spinach, sauteed onions, red pepper, mushrooms, nutritional yeast (for some cheesiness) and hummus.

I also ate the last of my homemade yogurt. I need to make more already.

I have something interesting to share with you guys soon – it’s not going to be your typical EBF post but I have to post it. I’d feel bad if I didn’t share the news and others were having a similar problem.

Lastly, it’s almost the weekend – who’s excited?!?

Mmmm I miss pumpkin smoothies. And I actually like that Kashi meal. Even though it would be easy to make at home. The Mayan Bake is WAY better. So sweet, spicy and perfect!

Sign me up for the “excited for the weekend” club! What a great omelette – I’m omelette challenged in that I ALWAYS end up with scrambled eggs. Oh well, tasty either way! Happy Friday :)

Spinning is quite intense, so it sounds like you made a wise decision by opting for a more low-key form of exercise. For some reason, I just can’t focus on a book when I’m on a piece of exercise equipment. However, I have no trouble reading the closed captioning on the TV. Ha.

That omelette looks gorgeous! Nothing like farm-fresh eggs…or breakfast-dinners for that matter.

I hope your news is happy news and not something absolutely dreadful!

I almost always read on the treadmill as I am not much of a jogger. It often feels like a paragraph or so later I am done with my work out AND I got some reading out of it. I am finished feeling rather productive most mornings.

I thought that the Veggie Bake was so-so, and I definitely agree that the Mayan Bake is where it’s at! That’s probably one of the only frozen dinners I’d buy simply because it’s so delicious!

Yuuuum that omelet looks amazing! Sauteed mushrooms or onions may be one of my favorite things, ever.

Sorry about the whole spin sitch, but it sounds like you worked yourself hard the night before so i definitely think you made the right choice in doing some yoga instead :)

love the pumpkin pie in the class! so cute!!!

Kashi’s meals are great…….but in the end i find that freezer food is freezer food. Better to just grit the teeth and put a little elbow grease to make a cheaper meal that is still healthy and gives lots of leftovers!!

i HAVE been craving lasagna tho!
