No Dinner, but I do have a Winner

All long weekends must come to an end, but not before a creamy bowl of oats.

In the mix: 1/2 cup oat bran, 1/2 cup water, 1/2 cup unsweetened almond milk, 2 tbsp. canned pumpkin, 1/2 tbsp. coconut oil, and ground flax seed.

I got the idea to add coconut oil to my oats from Christie! I’m happy to report that it was quite tasty. I loved the coconut flavor it added and the fat content kept me filling full all morning long.

As I walking home for lunch I had no idea what to eat. I was thinking that it was going to be a pb&j kind of day. Turns out I had a few obscure veggies laying in the bin at the bottom of the fridge so I chopped up a few and created a nice little hummus sandwich.

Toasted WW bread spread with garlic hummus, spicy apple mustard, cucs, mushrooms, carrots, and orange bell pepper served with some kettle cooked jalapeƱo chips.

I’m not a big chip person however, a small bag of these had been in the cabinet for months and today I was craving chips, so I dug right in.

In other non-food related news, I bought a new pair of running sneaks. I got the Asics GT-2150, which is simply the newer version of my old ones. This is typically what I do every time I get a new pair. I was fitted for this style when I first started running road races and it works really well for me, so why change?

My others were quite worn out so I definitely felt the extra support during tonight’s visit to the gym. Love Asics!!

After a quick visit to my packed gym this evening I came home ravenous and stir fried some leftover brown rice and veggies from my b-day dinner at Puff Changs. I was quite hungry and didn’t even think about busting out my camera so In lieu of a photo I have an announcement! :)

Glad you liked the coconut oil in the oats! I always thought my issue was protein but I guess in the end it was actually fat. I’m getting over my fear of fat though :D

your oats look really good! i’ve never had oat bran before… i absolutely love oatmeal, so i’ll have to give it a try! is it much different than regular oats?

The flavor of oat bran is very similar to oatmeal as it’s just the the outer casing of the oat. It’s much finer than rolled oats and cooks quickly (5-7 minutes). It’s also high in soluble fiber and easily/quickly digested.

I like making combination oats with 1/4 cup oatmeal and 1/4 cup oat bran! The texture of two together is great!

Between the spicy apple mustard and those kettle chips, I’m craving your lunch. Kettle chips have the BEST crunch factor! Woohoo for the new kicks – love the blue color :)
