I had another bowl of oatmeal yesterday morning. I think it’s official, I’ve gone and got myself addicted to overnight stovetop oats. They’re just so creamy and they cook so quickly.

Although, I thought about it and the creaminess factor can also probably be atributed to the fact that I use 1 full cup of the unsweetened vanilla almond milk to make overnight oats, however I normally use a 1/2 cup unsweetened vanilla almond milk and 1/2 cup water when I make regular stovetop oats. Yea- not sure why I didn’t think of that, as there’s no doubt that the extra almond milk adds to the creaminess. I’ll have to try the overnight, cooked oats method with the half and half combo and see if the oats still turnout as creamy or creamier than regular (prepared completely in the AM) oatmeal. My breakfast tests continue…..
For lunch I had a bowl of spiced up Bob’s Red Mill Vegi Soup. I added two canned chipotle peppers (pureed) along with tomatoes, carrots, bok choy, onion, and other spices. Turns out that chipotle peppers are really spicy. The soup was feeling hot, hot, hot. I added the juice of one lime to tame it down once I realized how spicy I made it. It helped quite a bit, but the leftover soup still packed a bite.

Let’s just say it was warming- so much so, my nose was running after eating it.
Despite all his hopes for a snow day, Isaac still had school yesterday. To make up for it, I gave him his b-day present as soon as we both got home from work. It’s cute because he’s such a little kid and gets so excited to open presents. I got him a large pizza stone from The Pampered Chef. I know what you’re thinking, “What- a gift from Pampered Chef for your boyfriend? That’s really a gift to you!” But nope- he’s actually been wanting one for the longest time… I kid you not!
The best part is that when Isaac was opening his present I got to open a little package that arrived in the mail for me.

Larabars, tea, and TJ’s PB… oh my?!? So excited to have won the giveaway over at Eating RD. Especially since the prize includes a PB&J Larabar. Thanks Kristen!
Since I knew he’d be ready and raring to use the stone I had already planned to make Thai Chick-Un Pizza from Eat Drink and Be Vegan for his b-day dinner.
Best Idea Ever!!

I used the $0.99 whole wheat ball of dough from Trader Joe’s for the crust and the pizza turned out to be fantastic. We both love Thai food so it worked out perfectly – the sauce (which consists mostly of peanut butter, ketchup, coconut milk) paired well with the chickpeas, fresh pineapple, peppers, green onion, and mung bean sprouts. So good!!

Isaac and I both suggested multiple times how much we liked this “unique” pizza. Another winner from ED&BV. After such success with all the recipes I’ve tried so far, I’m so pumped for Dreena’s next cookbook!!
I also made small salads with Annie’s Honey Mustard dressing as a side.

We ate dinner at the table, which is a rarity as we typically watch TV while eating (I know, not a good thing). So we cleared our cluttered, 2 person table and acted like real adults. I figure since Isaac is now 26 and I’m almost 25 it was the right thing to do. Twas a nice little birthday meal.
We watched an episode of Big Love (We don’t have HBO so we’re watching the last season on DVD through NetFlix.) I promised Isaac I would snuggle on the couch while watching instead of blogging as I usually do. I think that was a better gift than the pizza stone.
I have to ask all the other bloggers out there, do your significant others ever get tried of you spending all your free time blogging? I honestly don’t think Isaac minds all the time I spend blogging that much, but he does like to me actually watch TV shows or movies instead of multitasking. I pride myself on being good at multitasking so normally I do it anyway.

I think Mark is the same way. It’s like a special treat when I only watch TV w/ him instead of watching TV and blogging. I guess that’s why Lost is such a fun event because you cannot multitask through that show.

I try to blog when my husband is otherwise occupied. I think he does get annoyed with me though since I seemed to be attached to my blackberry. I have started leaving it in another room after dinner otherwise I get sucked into twitter or reading blogs.
THats a funny question because my husband and I were just talking about it. He gets more frustrated that I was always on the computer… so we just bought me my own!
Aw, sounds like a fun birthday celebration. My husband doesn’t mind that I’m blogging, but he does hate that I use our Mac to do it and he gets stuck with his slow-as-dirt work PC. Which is why we’re saving up (so slowly!) for another.
Yum! Your pizza looks amazing! I know exactly what you mean about multitasking. When I think of tv/couch time – I think blogging time. Brady likes when I pay attention, but he also likes the blog so he’s good with it. Unless I start asking a million questions, haha!
This is a good question! I don’t think Bill minds when I blog because he knows it’s my favorite hobby. I think it does sort of spur this “computer time” when we don’t necessarily want to be on computers (i.e. he sees me, gets out his laptop, and before you know it – we’ve both spent an hour on the internet not talking to each other). Last night, we decided to eat dinner at the table with no TV, no music, no phones – nothing. We ended up sitting there for two hours! It was great.
I get those constant questions: “who is that, what did they say,what’s that a picture of”? I really should spend more quality time with Carl (who doesn’t like computers) so that it doesn’t seem like I’m having an “affair” with my pc. Your pizza looks delish!

Word. I don’t think I have ever commented before so I will say that I love your blog and I think you are all sorts of hilarious. Now, down to business. The oats should be creamy regardless if they stay in the water for a longer period of time (i.e. overnight) because they release the starch. I do something similar when I cook my oats stovetop-style. Instead of putting the oats in after the water starts boiling, I put it in and stir it around to release the starch before the water starts boiling. This makes my oatmeal extra-creamy, and I usually don’t use any milk at all. It’s like risotto. Mmm… risotto.

Ha- I LOVE THIS! i totally agree that sometimes i do things just because I feel like as an “adult now” (26) I feel the need to do :adult like things”

I love that thai pizza, my husband and I have made it before and were really impressed. Blogging is something that I love and I don’t mind doing it….my husband is really supportive, too though I do confess I get tired of sharing our mac…I would love to have the freedom of my own…fingers crossed
Yes, BRM does make soup, but they’re not canned. You can find the dry soup mixes bagged near the other Bob’s products.

I just started blogging about a month ago, and it is one hell of a time suck!
It hasn’t gotten in the way yet, because he’s been super busy, but I’m sure it will stir up some trouble in the future- unless I get a boring desk job that allows me to do it from there!
