These little morsels of goodness!

Homemade chocolate covered peanut butter filled pretzels! (A delish gift from Isaac’s bother’s girlfriend.)

Need an homemade gift idea for Valentine’s Day or even next Christmas? Add these to your list because let me tell you they’re GOOD! Too good to have sitting around the house, that’s for sure. I ate 8 of them in one sitting (before noon). Oops.

Despite the above sugar overload I have been eating healthier meals, although last night’s dinner was a sweet treat as well.

Sweet and Sour Chipotle Tempeh with Sweet Potatoes with Coconut Lime Basmati Rice from Eat, Drink, and Be Vegan. (*The photo below is the perfect example of why I don’t like taking food photos at night!)

I was a bit nervous because my local store was sold out of my fav tempeh, LightLife’s Three Grain- one of the milder varieties. I ended up settling for the Lightlife’s Wild Rice variety. To avoid the bitterness and make certain the flavor would be mild I used a trick of the tempeh trade and steamed it in 2 cups of vegetable broth for about 20 minutes. The tempeh turned out to be tender, had no bitter after taste, and worked magnificently in the sweet and sour dish.

The combination of peppers, sweet potatoes, tempeh, and pineapple topped with an extra sweet sauce and cashews made quite the tasty meal. And although I enjoyed the coconut lime basmati rice, I wished I had served the S&S tempeh with a plain brown rice, quinoa or couscous. The sweetness of the sauce was more than enough for one meal, however I felt fine eating it because all the sugary goodness came from natural sweeteners. As an added benefit, a delicious smell completely filled the house while it baked! I’ve said it before, I’ll say it again- every recipe I’ve tried from ED&BV has been awesome. Dreena never fails me!

Since this morning was my first day back at the office I knew I needed some extra super charging to get me motivated. I had an Ezekiel muffin with better n pb/maca (superfood!!) and cottage cheese topped with (leftover) canned pineapple.

And for lunch: raw kale salad and a pita stuffed with tofukery, tomatoes, hummus, and kale.

I un-rawed the kale salad by adding a little TJ’s goddess dressing.

And tonight for dinner I had more of S&S tempeh and it was just as good the second time around.

I’m off to do a yogadownload.com video, Whittle My Middle, relax, and get ready for another day at the office!

    Those peanut butter pretzels are a great idea!! Totally doing that for Valentine’s Day. :)
    And I hate taking pictures at night, too…mine look soooo yellow.

    I’ve heard some people describe the flavor malty or similar to butterscotch. Personally, I think it has a unique flavor that is a bit sweet, but also bitter. It definitely took some getting used to- at least for me!

    And here are some of the benefits:

    * Increases energy, stamina and endurance
    * Enhances libido / stimulates fertility
    * Supports the immune system
    * Reduces chronic fatigue
    * Regulates and supports the endocrine system

    Wow, and I thought my recent purchase of PB filled pretzels were good. Now those are some PB pretzels!! :) Yum!!

    Have you tried the pre-flavored tempeh cubes? I think they come in Teriyaki and Lemon Zest, but they are pretty tasty and easy for on the go.
    I think they might be called Temph-tations or something like that?

    I haven’t tried those yet, but I saw them on the LightLife website. I would definitely be interested in trying the Teriyaki flavor. I’ll have to look for it next time I go shopping!

    You’re kale salads always looks so good. Do you ever find that raw kale tastes too bitter though? I always seem to have to steam mine with some seasonings. Teach me your kale secrets!

    AH! Peanut butter and chocolate!! The best flavor combo surfaces again :) Those look AMAAAAAAZING!

    And don’t worry – dinner pictures are always a little darker (frustrates me too though!) – the food still looks amazing!

    Chocolate covered peanut butter pretzels? To Die For!!! I love Maca…I usually put it in my shakes, but never thought of putting it on my pb muffins. Great idea.

    I’m pretty certain she bought them that way. They sell PB filled pretzels at certain grocery stores- I’ve seen them at Kroger and Trader Joes.

    Those PB pretzels look like a very easy eat!! I too would have gone for quite a few. Great Tempeh recipe. I too cannot get a good photo at night…..sometimes it’s all I can do! All the mini meals look great as well.
