So Much to Sea

Hi guys! Happy MLK Day!

Hopefully you were one of the lucky ducks that had today off from work. It was a working day for me so I was up bright and early, but having a delicious breakfast to look forward to made it a bit easier to hop out of the bed and hit up the gym. (I’m curious… does breakfast entice anyone else out bed as it does with me??)

I made more chia pudding using the same ingredients as before, but this time I blended it all up in the Vitamix, mainly because I was feeling lazy so that the protein powder would mix with the liquid better. I also decided to try the overnight trick by preppingĀ  it the night before. It was the perfect protein packed breakfast to have waiting in the fridge for me this morning when I got back from the gym.

Remember when I said Chia pudding was like eating chia seed cereal? Well that is definitely true if you eat it after letting it gel for 10-20 minutes, however if you let it gel-up overnight be prepared for a more solidified pudding.

It wasn’t a bad thing, but it was a totally different texture than the chia pudding I made a few days ago. I like it both ways, and the overnight method actually made it more pudding like.

Work went by rather quickly for a Monday morning and I broke for lunch a little later than usual. I headed home, said bye to our friend that was in town and then ate some homemade Indian cuisine.

I know this may look like a big pile of ……. mush (doesn’t all Indian food?), but it tastes delicious and that’s what matters in my book on my blog. This dish was actually leftovers from a few nights ago when I made Palak Soyabina Panira from Eat, Drink, and Be Vegan. This was my first ever attempt at making homemade Indian food and overall I thought it was good, but not one of my favorite recipes from E,D & BV and definitely not the best Indian fare I’ve ever had.

Ready for my excitement of the day??

I went to the Whole Food’s Cooking Demo. Two other food bloggies were there, Miss Christie and Miss Stephanie. I’ve met both of these ladies before so it was fun to catch up and experience the yummy food with one another.

Tonight’s “Cooking with Jesse” was all about SEAFOOD. As you all know, I’m a pescatarian so I do eat seafood, however tonight’s menu included many things I’ve never prepared or would have tried on my own.

On the Menu:

Thai Mussels

Mussels steamed with lemon grass, shallot, ginger, garlic, seafood stock and coconut milk.

I really liked the Thai sauce, which was a given because I love all things Thai- however the mussels were a tad on the chewy side for my tastes.

Steamed Clams

They look so pretty but turns out they were way too salty and chewy for me. I really did not enjoy this dish. So much so I actually spit it out. Sorry Jesse :( It wasn’t your cooking skills. I’ve just never been a fan of clams.

For the record I did eat the bread – it was good.

And this ended up being quite tasty!

Mid-way through my stomach was growling hard core and I really needed some dinner so I snuck over to the bar and grabbed my normal WF fare- a salad topped with lots of salads.

It was heavenly, per the usual.

To finish off the cooking demo Jesse whipped up a pot of Shrimp Bisque Soup

Let’s just say he saved the best for last as this soup was delish. I went back for seconds!!

Overall, I enjoyed hanging out with my ladies and tasting all the food, but this demo wasn’t completely up my alley and was much different than the first one I attended where everything was vegetarian. He mentioned that the next one might have a healthy theme. My fingers are crossed!

Would you be able to post how you make your overnight Chia Pudding? I’m about to try Chia Seeds for the first time:)

Thanks so much for reading and for leaving such a sweet comment. I’ll definitely post about how to make the overnight chia pudding but for now you can follow the basic recipe here, cover it, let it sit in the fridge overnight and enjoy the next morning.

No, you are definitely NOT alone! Breakfast is my BIGGEST motivator to get out of bed, run, and start my day. I always think about it the night before so I am having to long for during the miles each morning. It’s not weird at all! :)

I just made Chia Pudding too and I couldn’t agree with you more. The longer it sits, the difference in the texture becomes. It’s not bad, just different. I agree!

What a great night. Cooking demo at WF! Sounds like a blast! :)

I’m so glad you posted about the Whole Foods event. I’m always tempted to go to one of their classes or demos, but I’ve never gone. Looks like fun though!

Oh, I love mussels and clams. I think mussels are my favourite, but clams are a close second. Especially in chowder :) The demo looks like it would be tons of fun, and seafood would totally be up my alley.
