Baking, Uncooking, and More Baking

I’m pumped that you all are as excited about the iherb giveaway as I was. Honestly, I think it’s one of the better giveaways I’ve hosted because

1.) iherb has a ton of great products

2.) YOU get to pick what you win

3.) It involved the words shopping spree :)

After only posting the giveaway yesterday I am a little behind on what’s been happening en la cocina de EBF.

Where to start?!?

I baked a batch of (hempseed) Jam Print Cookies from E,D,&BV. This time I used less jam and they actually turned out to be jam prints and not volcanoes.

I also made this batch with gluten-free all-purpose flour and they turned out great. I tried one- just to make sure they were suitable to ship off to a special friend. ;)

Yesterday’s breakfast: I mixed things up a bit and did Overnight Chocolate Chia Oats (with oatbran)

  • 1/4 cup oatmeal
  • 1/4 cup oatbran
  • 1/2 scoop designer whey chocolate protein power
  • 1 cup unsweetened vanilla almond milk
  • 1 tablespoon chia seeds

I tossed all the ingredients into a bowl, mixed it together well and put it in the fridge for the night. Twas perfect the next morning as I rushed off to work.

Speaking of work, the marketing team went out for lunch yesterday at Arianna’s Grill, a local pizza/italian place. I ordered the Mediterranean salad with portobello mushrooms. It was pretty good, but nothing to write blog home about.

However, I have been to Arianna’s for pizza before and absolutely loved it. Just goes to show you that when you go to a restaurant that specializes in pizza, you should probably order pizza.

Last night’s dinner ended up being left over roasted root veggies before rushing off to the gym for an evening workout – 30 sweaty minutes on the treadmill. I did running intervals and ended up running at 8.0 MPH to show up the guy next to me who was running at 7.8. (muwhahaha) And, I finished up my workout by WMM.

This morning, 7AM came early so I didn’t end up going to the gym. I did a little yoga and then decided to pull out the old dehydrator and uncooked some kale chips.

FYI, you don’t need to own a dehydrator to make kale chips and Kath has a recipe that is perfect if you don’t. I love how much they taste like chips yet they are greens! I have to warm you that they are as addicting as regular chips- only it’s okay because you’re eating kale. I used a different recipe than normal this time and they turned out fabulously. Thanks Gina!

I sipped on a little Cosmic Cranberry Kombucha before work.

This was my first time trying the Cranberry flavor and I drank it, but it was my least favorite flavor yet. I should have know because cranberries are quite tart, but next time I’ll stick with my favorites as of right now- Triology, GingerBerry, and Grape. I still have mango and strawberry on my list to try.

Along with my cosmic cranberry I had an egg white round and an ezekiel sprouted muffin with jam and better n pb.

After my Mickey Mouse of a breakfast I worked from home until my doctor’s appointment, went to the doc, and then headed into work for the day!

For lunch,  I packed a spinach salad topped with leftover roasted root veggies and quinoa casserole that Isaac made for a staff meeting.

I also packed 1/2 of a Fruit Nut Bar of Gold for a snack.

Oh man. I thought the Banana Nut Chip was going to be my favorite, but the Fruit Nut has taken the leading role. It was so good. I loved the big chunks of fruit – especially the cherries. I’ll definitely be looking for this one in the stores here in Richmond. Aaron also updated me that he’ll be starting a Bars of Gold website and Foodzie page so I’ll be sure to keep you all posted with that info.

Isaac isn’t home from school yet, but I think I’m going to go cook up a pita pizza with a special cheesy sauce for dinner.

Oh my gosh, how did you know where to send the jam print cookies? I don’t remember ever giving you my address. ;) Those remind me of the jam cookies from Pepperidge Farm that I used to love as a kid, but yours look even better!

Chia seeds and kale chips – 2 of my favorite things, and I’ve now added Mae’s pizza cheese sauce to the list. I think you will love. :)

Ohhh cranberry kombucha! Funny story about cranberry kombucha: I was grabbing lunch at ellwoods on my way to my summer internship and I thought I was grabbing a cranberry juice! I discovered I was wrong when I shook it up and it EXPLODED all over me! You can imagine how I smelled the rest of the day…and that was my first experience with kombucha!

Haha. Oh man. Isaac and I had a similar experience. Isaac picked it up at ellwoods and thought it was tea. He had one sip, said it tasted like vinegar and took it back. They explained that that’s how it was suppose to taste, but let me return it anyway. :)

And to think, now I love the vinegar taste.

I just got my copy of ED & BV in the mail. I can NOT WAIT TO open it up and start cookin’. If the recipes are anywhere near as good looking as those tumbprints, I am in luck. :)

Love the blog, and wanted to know where you got your chia seeds?? I asked in my blog, and have looked at Earth Fare, but no luck. :( Also, I am trying “overnight oats” tonight for the first time (gonna munch on it when I return from a 6:00am spin class)….any suggestions of fun recipe ideas?

Hi Tyler – thanks so much for leaving a comment! I get my chia seeds from Whole Foods or I order them online. Navitas Naturals is a brand that I trust for chia seeds and other superfoods.

Your story of the guy on the treadmill make me laugh because I did something similar this morning! Only I was trying to show up some guy on the elliptical next door who was really going at it. But I think I won :).

Those raw kale chips look great. I’ve only ever tried the baked version, so I’ll have to try this version.

It’s interesting because I don’t think of myself as a super competitive person, but sometimes it’s fun to be competitive when working out. It really pushes me to do more than I normally would.

Oh girl this post just made me remember how much I miss ordering Arrianna’s when we lived in The Fan! Their pizza is fantastic but I also adore their mixed green salad with chicken – it was my fave thing to get actually – sorry you didn’t love the meditteranean salad though :/

mmmmm your protein overnight oats sound yum yum yum. I’m gonna do that when I know I’m going to be busy in the AM. I need to try out chia seeds again. The gumminess they turn into really turned me off the first couple times.
OOO I am such a sucker for those Ezekial muffins! Yum! I am having one in the AM. Those cookies look scrumptious too!

How does it taste with the oat bran not cooked? I LOVE oat bran with oatmeal…just can’t imagine it not done stove top. I will Def. give the overnight oats a try, though :D

I liked the oat bran uncooked. Oat bran is very fine so it wasn’t a chewy as the old fashioned oats are, but it was still just as tasty.

You’ll just love the strawberry Kombucha!! That’s supposed to be the mildest flavor and I actually tried that one first!! It tastes like all kombucha drinks do, with a subtle taste of strawberry! I have yet to try the mango or triology though!

And those overnight chia oats have been occupying my mind for weeks, hahaha
I am just dyingg to try them but will have to wait till i’m home again for a break, and with all the ingredients stocked :)

Always yummy eats!! Those cookies look tasty as do the overnight oats. I’ve been on an overnight oat kick :) And kale chips are the bomb, they’ve become a staple in our house.

Yum, Yum! Those cookies look excellent. I need to dig that cookbook out and make some for the weekend! Also, I have loved reading all about your experiments with oats and chia seeds. I finally got some chia seeds this past weekend, so I’ll be trying the overnight chia oat recipe soon!

I would say I really liked the Cranberry Kombucha but I honestly can’t taste much of a difference between the flavors, which is OK because I like them all.

Now that I have chia seeds, I need to try your overnight chia oats!
