I have two things to share with you all on this lovely Sunday morning. One is a tad bit more exciting than the other so I’ll have it for last. The first is a recipe for a delicious breakfast item, which just so happens to be what I had for breakfast this morning.

To be quite honest, I’m not a big fan of pancakes or waffles, but sometimes I get the craving for them. This morning it was actually Isaac’s idea to make pancakes, but I went along with it and threw in some ingredients to make them a tad bit healthier (and chocolaty).
Pumpkin Buckwheat Pancakes with Chocolate Chips
- Hodgson Mill Buckwheat pancake mix (prepared per the box instructions with milk, egg, and oil for 6-8 servings)
- 1/4 cup canned pumpkin
- 1-2 tablespoons mini chocolate chips
Mix pancake mix, milk, egg, and oil using an electric mixer or using your own arm power. (I used 1/2 cup almond milk, 1 egg and 1tbsp. canola oil). Add in the pumpkin and chocolate chips. Let the batter sit for 5 minutes. Pour 1/4 cup portions of the batter onto a heated griddle at 360° or into a nonstick skillet to cook.
The griddle works well because you can cook all 6 pancakes at the same time, however if you don’t have one simply place the cooked pancakes in a single layer on an ungreased cookie sheet and cover them with foil. Put the cookie sheet in a warm oven (250°) to keep the pancakes warm for approx. 10 minutes while the other cook.
Serve the pancakes with butter and maple syrup. I like to use Earth Balance butter and 100% Maple Syrup.

I like eggs prepared lots of ways, but there’s a deviled egg tradition in my family. I learned the family recipe years ago from my mother-in-law, and now I bring them to all family gatherings.
My favorite way to eat eggs is in omelet form with broccoli, mexican cheese and breakfast sausage!
Just like I had them this morning — in savory oats! Top oats with an egg white omelet (add some cheese) plus a squirt (ton) of ketchup and voila, yum!

I adore eggs. They are delicious, filling, comforting and the perfect protein! My favourite way to eat eggs is an asparagus frittata with grilled tomatoes on the side. Yum-O!

I have been OBSESSED with eggs lately. Eatting them for breakfast, lunch and dinner. My favorite way is to scramble with a variety of toppings- salsa and backbeans, fresh herbs and cheese, – the other day I even used some leftover potatoes and bbq shredded chicken- SO YUMMY!!
I love to scramble up an egg with some S+P and make a sandwich out of it. I probably have an egg sandwich 3 times a week for lunch!

Eggs as part of French toast
Tweeted! My favorite way to eat eggs (and there are SO many ways) is part of challah french toast. Mmmmm. But for the record, I also love very soft scrambled eggs and sunny side up. And basically any kind.
I don’t eat eggs very often because of the texture, but I did happen to enjoy some this morning! I cooked some egg whites and mixed in tomato, spinach, and avocado! Yum.

I scramble up my eggs with Mrs. Dash Sundried tomato and basil mix, spinach, toss on top of toasted bread with a slice of turkey bacon…. delish!! Works as breakfast or lunch or dinner!

OMG this giveaway is perfect for me — I’m a poor college student with almost no cookware (one crappy pot/pan, one tiny baking sheet), but I love to cook! Anyways, I actually had eggs for brunch today. I like them sunny side up with the yolk nice and runny! Yum!!!

This is going to sound strange and not delicous but my two favorite ways of eating eggs are:
1) Scramble eggs with a packet of sugar, cook and enjoy. You’d be surprsied but this is actually delicious.
2) Fried egg over cous cous. Yolk+carbygoodness=delicious.
I like eggs over easy so I can dip toast in them or I like them in am omelette with peppers and onions!
When I’m out, I love getting poached eggs because they seem too difficult to make at home. When I’m cooking for myself, I love a veggie scramble.

I like them scrambled with some ham and melted cheese in it. Served with a slice of some perfect whole wheat bread.
I’ll eat eggs in just about any way, shape, or form! But my favorite is probably cooked over medium… on top of oatmeal with salt, cayenne pepper, and cheese!
