My Healthy Veggie Stuffed Hummus Sandwich inspired another delicious sandwich for lunch yesterday.

I used the Nature’s Pride 100% Whole Wheat bread once again, along with the basil hummus, alfalfa sprouts, spinach, cucumber slices, and peppedew peppers. The only change was that I swapped out the feta cheese for some oven “fried” tofu.

Once again, I had a delicious sandwich and I only ate half again. These sandwiches are super filling. I don’t know what it is but I can only eat half before I’m feeling stuffed. I’m saving the other half for tomorrow’s lunch- I can’t wait!

For dinner I had the same thing I had last night- a Garlicky Broccoli, Corn & Bean Burrito from Eat, Drink and Be Vegan.

Can I just say that Dreena is amazing and I am totally loving her cookbook right now! Everything I have made has been straight forward, easy to prepare, and most important- delicious! This burrito isn’t the most photogenic thing I’ve ever eaten but boy was it tasty- super garlicky and extra flavorful. I had it for dinner 2 nights in a row. And Isaac had it for dinner and for lunch. So now we’re out of burritos at the EBF casa… :/

Oh, but we did make a trip to World Market last night to check out some couches. We like one and I think we’re going to make a purchase this weekend. Did you know that World Market get’s their furniture from the same company that Crate and Barrel and Pottery Barn use? The sales person told us that and I found it interesting because their prices are waaaay more expensive at the other stores. Although we didn’t end up getting the couch last night, I didn’t leave World Marketing empty handed- I snagged a bottle of red wine and large, deep yellow serving platter, both of which were on sale- hooray for good deals!

OMG I am obsessed with World Market… I just recently got the best rug there for dirt cheap, their sales are incredible… as is their wine selection and their assortment of awesome international food items! Maybe one time when you head out to the west end we should meet up for a bloggie lunch or something :)

The sandwich looks delicious! I saw Eat, Drink & Be Vegan at Barnes and Noble yesterday and it was hard to pass it up after hearing so many good things about it, maybe I will have to buy it after all ;)

oh my goodness gracious! I looooove me some World Market :) I was just there the other day and picked up some chocolate covered peanut butter filled pretzels. I’m a big fan of their chocolates too….I think it’s the Lindt brand I usually get :)

I love veggie sandwiches! You just throw on whatever you’ve got in the fridge and have a great sandwich! It’s like magic.

I’ve never been to World Market and I always wondered what they sell in there! Next time I’m gonna go in and stop by. I wanted to actually go in there last time I was in the West End but I was pressed on time.

p.s. your sandwiches have been looking EXTRAAA delicious! I just bought an awesome cookbook yesterday called “the accidental vegetarian”. I can’t wait to make a recipe from it!!!

ED&BV is awesome, isn’t it? I think the recipes are so accessible and straight forward :) I’ll have to remember that one to try out later.
