Satify That Craving

Getting back in the groove today was quite hard, but all and all I had a pretty good day. Work was busy so the day went by quickly, which is always a good thing. It all started with a one hour session on the elliptical. I usually only do 30 minutes of cardio but I’m trying amp up my routine so today’s session was extended. After getting sweaty, I came home, got ready for work, and made my go-to quick breakfast, a smoothie and a slice of ezekiel bread with Crofter’s Superfruit spread.

Pineapple Banana Chia Smoothie

  • 1/2 frozen banana
  • 1 cup of frozen pineapple
  • 1 tbsp. of chia seeds
  • 1/3 cup of unsweetened vanilla milk
  • 1/3 cup of water

I threw all the ingredients in the Vita-Mix, toasted my bread and ta-da breakfast was served (as I ran out the door).

This breakfast held me over really well and I didn’t end up eating lunch until 12:45 or so. This was crazy for me because I’m usually starving by the time the clock strikes noon. I had a massaged kale salad that was massaged with a tiny bit of olive oil and avocado and tossed with cucumbers, snow peas, orange bell peppers, oven “fried” tofu, raw corn, and red onion.

IT WAS DELICIOUS! I think I would have this salad everyday if I could. Raw corn totally made it- I love the sweetness it adds.

I packed a little snack mix to take back for work. I mixed whole grain cheese goldfish, raisins, kashi go lean, raw almonds, and a couple TJ’s peanut butter stuffed pretzels.

Since the spring rolls I purchased over the weekend weren’t up to par I decided to make my own tonight for dinner.

Tofu Spring Rolls:

I stuffed each rice paper with rice noodles, cucumbers, carrots, oven “fried” fu’, romaine lettuce, fresh basil, and a few squirts of sriracha sauce. I dipped the rolls in a homemade sauce of tamari (wheat free soy sauce), peanut butter, and water. I hate to toot my own horn, but mine were definitely better than Ellwood’s over the weekend. These were delicious and completely satisfied my spring roll craving.

Maybe now I can move on to move fallish foods. Pumpkin oats here I come! What type of foods have you been craving lately?

Also – I lived in Richmond for about a year (as a consultant on a project) and I ate EVERY SINGLE DINNER at Ellwood’s. It holds such a sweet place in my heart and I get really nostalgic when you talk about it. Do you ever get the vegan scones?

Your snack mix/granola looks awesome. Ellwood’s is quite delish, but no I’ve never tried the vegan scones. I like the oatmeal cookies with raisins or the ginger bread cookies. Both are v. yummy. Where did you live when you were in Richmond?

Where did I live? Hahahah – at the crowne plaza! I was there Mon-Thurs. Oh, the life of a consultant. I just adore Carytown – honestly it just bring me the happiest memories. And my fave place was Davis and Main.

Totally feelin’ the squash and pumpkin these days! Got some Pumpkin Butta from TJs the other day (hooray!) and last night made what has now become my fave fall dish of 2009 by far – Squash, Pear and Onion au gratin…. yum :)

I am CRAVING sweet and salty right now. I’m going to attempt something with sea salt, stevia and popcorn. Wish me luck! Oh, and the pumpkin oats have been calling me lately too!

So I just had to write down your little trail mix combo after seeing it. I’ve been having the weirdest craving for cheesy crackers (like goldfish), and i’m obsessed with tj’s pb pretzels and raisins…..sooooo that mix sounds pretty great to me!!

My favorite salty + sweet combo includes some carob chips, dried cranberries, tj’s wasabi peas and pretzels or cereal!!! :) I know you didn’t ask for trail mix suggestions, but I thought you’d enjoy it!

I’ve been craving oatmeal lately. I went nearly all summer without eating it, and now I’ve been eating it nearly every day. I’m ready for fall!

What a great breakfast with all that staying power!! Sweet and savory is quite possibly the best combination ever. Your spring rolls look fantastic – show that restaurant who’s boss ;)

Lately I’ve been craving hot cereal which is weird because I didn’t used to eat it this often!

Wow! Your spring rolls look so pretty. Isn’t homemade food always SO much better?
The other day I bough Fage instead of my Trader Joe’s greek yogurt and it’s all I’ve been craving since. Too bad my budget doesn’t crave it!

Wow! An hour on the elliptical? good for you–I’m usually done after 30 min and need to change it up.

I love, love, love raw corn in my salads – I will be so sad when the season ends and there is no more good corn! I guess I will just have to eat my fill NOW while I can. :-)

Your breakfast smoothie sounds so good.I will have to try it. Glad that you had a great workout session! Keep up the good work. I am looking forward to fall as well especially pumpkin, squash and fresh local apples. Yum it is making hungry just thinking about it all. I would have to say that pumpkin is my all time favorite though apples don’t fall to far behind. There is so much to create with both of those ingredients.

Your food always looks so delicious :D

I’ve heard good things about the massaged kale salad, but I’m really hesitant to try it because everytime I’ve tried kale plain it’s been so bitter and I really didn’t like it – but juiced or baked is just fine. That salad looks soo good though, I think I’m going to have to brave up and try it soon!
