PB&J Comes My Way

Did you know that chia seeds oats are pretty much the best thing ever for breakfast? Well, they are! They are both tasty and filling and I’ve pretty much fallen head over heels for them. Hence the reason I eat a bowl almost every day (when I’m not having smoothies, of course). This photo is actually making my mouth water right now.

Especially that spoonful of PB&CO cinnamon raisin swirl pb. <–When I went to go find the link for PB&CO I got hooked on the website for a while- day dreaming about all the amazing sounding sandwich options they serve at the PB&CO Sandwich Shop in NYC. Isaac and I are planning to take a trip up to NYC at the end of this month and now I really want to stop by and get The Elvis- A grilled peanut Butter sandwich, stuffed with bananas and honey. :)

After a morning at the office, I went home for lunch for a quick and colorful salad of baby romaine, cucumber, tomato, broccoli, feta cheese, chopped red cabbage and Rachel’s Wickedly Delicious Cucumber Dill Cottage Cheese on the side.

I didn’t know what I would think about the cucumber dill flavor, but surprisingly it was tasty and the perfect topping for a salad. I’ve been impressed with all the Rachel’s cottage cheeses I have tried!

After lunch I headed back to the office for some productive work. The highlight of my afternoon came around 3 when I pulled out my snack. As I mentioned previously, I was extremely excited to try the latest and greatest LARABAR flavor – Peanut Butter & Jelly.

Did it live up to the anticipation? Oh YEA!! It tasted just like my mom’s PB&J sammie- it took me right back to grade school when I used to pack a peanut butter and jelly sandwich for lunch everyday! I’ll definitely be buying this bar as soon as I find it in a grocery store near me. I’ve been looking but haven’t spotted it.

Has anyone found the new bars yet?

I want to try this one! I love chia seed oats too, I had some chilled for dinner last night and they are just perfect. I’m craving more right now!

I know…I thought the same thing about the PB & J Larabar- just like a sandwich!! yum! I actually did find the new flavors at my Whole Foods (in New Orleans) and I was surprised that we had them so soon!!!

Isn’t that LARABAR the best!!!! Ah I love it. I just found it for the first time in my local Whole Foods. I guess they have been selling out so it’s hard to find them. Your oatmeal looks awesome, I need to try chia seeds again. The first time I tried them they weren’t my favorite, but I haven’t tried them to their full potential. Have a great night my dear!

I’m new to chia seeds — what do they add to the oatmeal? Do they change the consistency of the oatmeal? Add more flavor? Add healthy nutrients? Thanks!

I love the Rachel’s cottage cheese cups! I like to use the cucumber dill like a tzatziki dip–perfect for falafel!

ooooh, i still need to try those chia seed oats – and i really need to get some pb&co yummies, too! i hear all the flavors are amazing! cinnamon raisin swirl sounds perfect!

wanted to tell you that i have found the pb&j lara bars @ good foods grocery – they’re so yummy! mmmmmmmm!

I haven’t found those bars yet! But, we did just get the Arnold’s sandwich thins in here…which means the PB&J Larabars should be arriving sometime in 2011, maybe even late 2010!

I haven’t found the new Larabars yet here, but I figured they’ll be behind in making their way to the Great White North, as most things usually are. I’m keeping my eyes peeled though!

Hi Kathy!

When they are combined with liquid the chia seeds start to get a gel like consistency, so they thicken the oatmeal and add a bit of texture. They are also nutritious as 1 tablespoon (what I use in my oats) has 6 grams of fiber and 3 grams of protein. The flavor of chia seeds is very mild and almost non-existent so that’s not a huge factor.
