Today’s weather was the first sign that summer is almost over. I’m a little sad, but also excited because I love all things fall – particularly the cuisine and foliage here in VA- it’s beautiful! My car thermometer was at 68 degrees at 5:45AM and I don’t think it got much warmer over the course of the day- maybe 75 at the most. The reason I was up and in my car while it was still dark out is because I went to a 6:00AM boot camp class. The class s offered at my gym and is taught by the same woman who coaches the Ladies boot camp meetup.com group I’ve been attending. It was intense, but I loved it. I think she mentioned at the end of class that we did over 150 pushups! Too bad I had done arms yesterday as well. Needless to say I’m sore!
Since the end of summer is drawing near I thought I would post a few photos of my favorite summer eats- salad. In reality the above statement was just a ploy to post a bunch of salad pictures that were taking up storage space on my camera.

Salad number 1: baby spinach topped with locally grown yellow tomatoes, red purple onion and cabbage, cucumber, and avocado.

Salad number 2: baby spinach with red tomatoes, a sunshine burger, roasted eggplant and raw corn & avocado salad.

Salad number three was massaged kale with carrots, tomatoes, TJ’s goddess dressing, and a slice of TJ’s naan.

Salad number four was massaged kale with tomatoes, sun dried tomato, and red purple cabbage.

Salad number five was actually my lunch today and the reason for the title. Look how big that slice of tomato is. It’s about the size of my palm! And it was homegrown without steroids! Under the monstrosity that is a tomato there are black beans, red purple onion, hickory smoked tofurkey, and organic spring mix.

Last but not certainly not least, the sixth salad was my dinner tonight. And I definitely saved the best for last as this was so tasty. I used the organic spring mix, onion and cabbage, cherry tomatoes, and topped it all with fish sticks oven “fried” tofu.

I added a little TJ’s goddess dressing and mixed it all up. Soooo good!
So there you have it- what I’ve been eating for lunch and dinner almost everyday this summer- SALAD!
As you can tell I use a lot of the same salad staple- tomatoes, onion… and the cabbage- it’s seriously been in the fridge for over 2 weeks and is still good. But I also try to switch it up so that having a salad isn’t boring. To be honest salad is one of my favorite foods- it’s just so versatile!!

I’m in between salad being the shiz, and it being blah. I do love me a good salad, but I have to be in the mood for salad, otherwise I won’t enjoy it.

I loooove, love, love salads. I could eat them everyday – in fact, I usually do! They’re so versatile and I love finding the most random things in the fridge to toss in there! Yours looks great!

I love getting up super early for classes at the gym. Last month, I went to a 5:45 Spinning Class followed by a 6:30 pilates class! It was amazing!

I ADORE salad! I don’t really feel like it’s a salad if it doesn’t have raw spinach and/or napa cabbage–love ‘em! I add all sorts of things to my salads. Sometimes I even have salad for breakfast! LOL
I love avocado on my salad, and frozen blueberries are AMAZING on salad. I sometimes add some lightly steamed veggies on top of my raw veggies. Can you really go wrong with salad? I think not!
Love these photos and ideas. I’m definitely going to try that avocado/corn salad!

Love, love, loveeee salads. Always. They are my go-to at the sorority house, but I always throw whatevers being served on top if I don’t like any of the other sides.
I miss topping my salads w/ sunshine burgers though, as I did allll the time over summer! Yours looks delicious.

Love your summer photos! So colorful and delicious looking! I totally felt the same way this morning when I was absolutely freezing when I hopped out of bed! My favorite summer food would have to all the fun seasonal berries (especially blueberries and blackberries)!

I LOVE salads and have been eating them almost every day too, I just did a salad filled post as well. I’m enjoying my fresh salads before summer is over and all the good produce is gone. Your salads all look fabulous!

when i got up monday morning (4:45) it was raining a good bit & it made me sad because i didn’t want to run in the rain, so i ended up getting over to the gym & hit the elliptical, only to find out that the rain had stopped by 5:30ish. grrrrrr! i did get a nice run in this morning though – and the cooler temperatures made me happyfaced! so awesome on the boot camp, Brittany! i really need to try something like that. a good kick in the butt = the best in the morning & is one helluva way to start your day! that rocks! 150 pushups?!? wow! my arms would probably fall off. ahahahahahaa!
i can’t get enough of salads. they’re probably my favorite & i have one every day. i love that you can put whatever you like in them & switch it up all the time. it’s good to see someone else who appreciates them, and who loves onion in theirs, too. red onion makes them all more yummy! i really need to get some red cabbage to top them off with, i just always forget to pick some up. i shall try hard to remember. a favorite summer eat of mine: raw corn, halved cherry tomatoes, red onion, chopped cucumber, and some balsamic vinegar. mmmmmmmmm! i just mix it all up in a bowl with a little sea salt ‘n pepper & eat it with a spoon. summer eats are such tasty eats, although i am looking forward to all the fall root veggies! yay!

I love salads! I get in salad moods where I just eat different salads for a few weeks.
And I like in the fall to just heat them up in the wok with potatoes and they are cool weather salads. Or maybe I just like potatoes

I am preeeeettttty obsessed with salads! In fact, I’m pretty sure that’s what’s on the plate for dinn tonight. However, I do not get people who love boring salads. I need mine loaded up with lots of veggies, fruits, nuts–the whole shabang!

I heart salad. Period. As long as it has a variety of veggies & isn’t soaked in gross stuff (i.e. fattening cream based dressing, fattening exorbatant amounts of bacon/cheese/non-good for you salad stuff) then sign me up, I’m there

Oh my goodness it was gorgeous outside today! I took Matilda on a long walk and she was the star of a new video project I’m working on. I love the comforting foods of fall, but I will miss my salads. I bought some romaine today and then I realized that summer is coming to an end. Does the oven fried tofu taste like fish sticks?? By the way, your salads look AWESOME! I love adding corn to mine – gives it a subtle sweetness.

Those pictures are gorgeous! There are endless options when it comes to salad. I must admit… a salad with tons of cucumbers and peach and mango salsa gets me every time!
