Of course you can! I proved this by putting a healthy spin on Thai Pineapple Fried Rice.
To start, I sautéed a red bell pepper, garlic, green onions, and a tiny tiny bit of habanero chili pepper. Then added 1 egg.

Mixed in a the sauce of vegetable broth, tamari (wheat free soy sauce), curry powder, and stevia.

Threw in roasted cashews.

Next came the left-over brown rice. It should be about 1-2 days old. Mine was 3 because I’m such a rebel.

And last but not least, the pineapple, raisins, and frozen peas were tossed in the skillet.

(Don’t mind the beat up measuring cup).
Okay, I realize those directions aren’t very precise, but that’s the just of it. I actually used this recipe as inspiration, so if you want a real recipe with real directions, measurements, and all that jazz I would recommend visiting the link.
Thai Pineapple BROWN Fried Rice is served.

And it case you were wondering if the rice was good, I ate it for last night’s dinner, today’s lunch and today’s dinner. It’s gone now.
In other EBF house news, Isaac set up a cute little table on our back deck yesterday so I’m blogging from the new spot I have claimed as my own.

It was extremely hot and humid today, but the sun is down and there’s a nice little breeze blowing. I think I can get used to this.

Yes, you can! Funny, I just made this last nite w/some brown rice leftovers.
I did old school chinese style w/soy sauce, eggs, scallions, garlic and bacon (in place of bbq pork).

This sounds delicious. This macrobiotic place near me has “not” fried-rice, but I’ve never actually made it at home yet!
You can also make Risotto using Quinoa. We call it Quinoa-sotto around our house.

That sounds so good! Adding pineapple, cashews, and raisins makes that sound so much more interesting than regular old fried rice.
