Falafel Pitas

Today was your average lazy Sunday. All wasn’t lost though because I did get some school work done, made my way to the gym, and prepared a fab din for Isaac and I.

Lunch was an avocado massaged kale salad with red onion, locally grown tomatoes, green peppers, and cucumbers (love that Isaac’s parents have a garden!!), nutritional yeast, sea salt and ground pepper.

With a small bowl of Amy’s Black Bean Soup. Not going to lie, I think I might have a small crush on Amy.

I finished off lunch with an organic white nectarine. I bought this on a whim at the grocery store on Friday and I’m so happy I did. It was delish.

Plus, the insides matched my nail polish….

After lunch I changed from my pajamas into my workout clothes (told ya it was a lazy sunday). Too bad I ended up just lounging around the house until 4PM. I’m known for doing this on the weekend. I wake up and get dressed in my workout clothes with all intentions of going to the gym right after eating breakfast. Then I get distracted, either by things online (twitter anyone?) or household stuff like cleaning and laundry. It’s basically me wearing my workout gear all day to remind myself to go to the gym… Kind of funny. But actually I love wearing workout gear- it’s comfy and yoga pants make my butt look good. :) If I could, I would totally wear them to work. We have a very causal dress code at my office, but I haven’t tried wearing yoga pants just yet.

Once home from my afternoon sweat sess I went to work making dinner. I took the advice from my readers and made a tzatziki sauce to go with the Falafel Sunshine burgers.

The ingredients included garlic, cucumbers, lemon juice, Fage greek yogurt, and S&P.

I also added a little feta cheese to the tzatziki for a nice twist.

Falafel Pitas- EBF Style

I cut two pitas in half and put a thin layer of hummus on one side. I added the burger, tomato, red onion, and romaine lettuce and then topped it all with a blob of tzatziki.

They turned out perfect, maybe not quite as good as the Amsterdam Falafel Shop at 1 am after a night of binge drinking, but still pretty darn tasty and much healthier.

Isaac and sat down to a romantic falafel dinner while watching last week’s episode of Next Food Network Star. Guess I’ll be watching tonight’s episode sometime later this week- I’m always behind on watching my DVRed shows (and I don’t even have that many). I’m not a big TV person and whenever I do actually watch tv I like to multitask. It drives Isaac nuts.

The way you pita-fied that falafel is sooooo good! And the addition of the feta in the sauce must’ve been awesome.

Lol I’m the same way with the workout clothes! Yoga pants are sooo comfy.

That looks like quite a wonderful lazy Sunday to me. Joe’s been nagging me about making homemade falafel and I think I might have to after seeing yours. Yum!

Haha, I totally laughed when you said you liked to wear yoga pants cause they made your butt look good…cause i can TOTALLY relate. Love some stretchy spandex-ish material!

Oh how I love those falafel pitas!! I need to try the sunshine burgs! I wear workout gear all the time – mostly because I sleep in yoga pants and when I’m at home I don’t wear jeans. Wearing jeans in the house just feels weird ;)

I just want to hang out with you. We are so much alike! I love lazying around on weekends and not doing anything productive until after 4pm :) Twitter is addicting!

That massaged kale salad looks great. What exactly does nooch taste like? I’ve never had it but could always use something to liven up a salad.

Pretty nails and gorgeous falafel pitas! I need to find those falafel burgers STAT! I also need to hear more about this night at the Amsterdam Falafel Shop…do tell, do tell.

Mmm, I love me some yogurt sauce — just made some yesterday. Try adding fresh dill — it’s perfect with the lemon juice!

Funny you mention yoga pants and their rear end accentuation – I just wrote about lululemon culture last night! But I do agree — I love that they make me look like I have a butt! Haha.

Those falafel pitas look DELISH!!
I love Sunshine burgers but haven’t been able to find the falafel version.

Oooo that reminds me to pick up sweet potatoes at the store. I think they taste better as oven fries than baked(though both are delicious)
