Beans on Toast

I did not want to get up this morning, but I dragged my bum out of bed and went to the gym. Once home I had a nice slice of Ezekiel toast with Crofter’s SuperFruit Spread. I tried a new one this morning. The Europe flavor with currants.

It took me down memory lane to when I stayed in England for a summer during college with my room mate. We had our fair share of currants, jacket potatoes, and beans on toast.

Yup, that is baked beans served on top of toast for breakfast. I promise it was actually good, white bread and all. Turns out the baked beans in England aren’t sweet like the typical American version, however I would have probably still enjoyed it if they were sweet because I like grains with baked beans. One of my favorite ways to eat baked beans is to scoop them up with tortilla chips. It might sound odd, but it’s really good. Seriously, try it!

After day dreaming of all things European, I ran out the door to work with what was suppose to be a leopard smoothie, turns out it was a diluted leopard. See.IMG_1364.JPG

I used a little less mango and it was a lot less yellow, but still 100% tasty so it’s cool. I also added 2 strawberries for some flava flav.

Lunch was leftover veggies from last night straight from the fridge and stuffed in a pita.

With a wasa cracker, cinnamon raisin swirl pb, and extra raisins because I didn’t get any when I was spreading the PB. What’s up with that PB & Co?

And after a successful shopping trip. I found shoes to match my dress.. woo-hoo! I came home for a massaged kale salad topped with pan cooked shrimp. Easy peasy.

Sorry this post is short and non descriptive, but I have to get into bed. Girl needs her beauty rest. See you all tomorrow!!

Aw, the beans on toast shot makes me feel so nostalgic!
I’m English and at University I swear I lived on beans. Beans and toast, Beans and baked potatoes, even after a night drinking I would usually get chips (fries) and beans on the way home!
Now I live in Japan and I only get beans when my Mum posts them to me in care packages!
I would kill for some beans on buttered wholemeal toast! Japan isn’t so big on whole grains either so no wholemeal toast for me :(
But I do get Miso, Seaweed and Sashimi on demand so it’s not all bad!

Ooo baked beans and toast? Yummm :D I bought so much bread today! A loaf of cinnamon raisin and some artisan grain bread. Now I have more ideas! That spread looks delicious. AAAND I’m pretty sure I’ve done baked beans with tortilla chips too. I think it’s the saltiness mixed with the sweetness of the baked beans. SO GOOD!

I’m not the biggest fan of baked beans but your fruit spread looks good :-) I tried a peanut butter at the Farmer’s Market the other day that was filled with banana and raisins! It was so good!!

I love beans…and I love toast, so I think that this may just have to be a meal in my near future!

That shrimp looks really delicious too. I’ve actually never tried kale but I’ll have to give your recipe a try because that looks too good to pass up :)

PS – good for you getting up. on the mornings I don’t want to get up, I definitely don’t see any part of a gym, pretty much just the back of my eyelids ;)

Oooh…I love your dinner! And wasa with PB and raisins is always a good snack. When I was on my cruise, they served baked beans for breakfast for the British cruisers. I tried them a few times – I would have enjoyed it more if it had been my recipe. But beans anytime of the day works well.

I was having that same issue with the Cinnamon Raisin Swirl! I found that the raisins sink to the bottom (I am assuming during the filling stage) so you just have to mix it up a bit! I hope this solves the missing raisin issue!

The Europe flavor sounds like it would be my favorite – LOVE currants! Check you out showing the beans and toast who’s boss! I think that sound really good!!

Beans on toast is shockingly good! Being a Yank I wouldn’t have thought of it myself, but there’s a legit tea shop in the West Village here in NYC and I went for a full English breakfast one time – DELICIOUS! Especially with the roasted tomatoes on the side. Amazing. Oh and don’t forget the scones….

I just got the pb&co peanut butter, and all the raisins sink to the bottom- so every couple days you have to stir them back to the top :)
